Après quelques essais sortis de manière "confidentielle", nous avons décidé de structurer notre programme de vieillissement en barriques et nous sommes heureux de vous dévoiler notre première saison de coupage. Il s'agit d'une saison classique, fermentée en cuve inox puis blendée avec 15 % d'un jeune lambic (1 an) que nous avons eu la chance de sélectionner chez nos doux voisins de la Brasserie Cantillon. Le tout a vieilli près de 8 mois en barriques de vin blanc.

Cette bière est disponible uniquement en bouteilles de 75cl, mais un fût sera exceptionnellement branché demain pour son lancement.

Bottle sample at a tasting at Yana's place. Cloudy golden. Funk, barnyard, oak, some earth, fruitiness, a bit of spiciness, sourish, some citrus. Very good.

Bottle picked up at the brewery last summer. Hazy lemon with a short head. Aroma of salty lambic. Flavour is salty apple, lemon grains, lambic finish.

75cl bottle (5,4%) from Nanobrasserie de l'Ermitage Taproom (bought 06/2019, BBF: 30/04/2022). F: no real, some bubbles. C: pale gold, light hazy. A: a lot of lambic tones, green plums, bit white wine, barnyard, sour fruity, woody. T: medium body, fruity, green gooseberries, bretty lambic, bit puckering, woody, light caramel, funky, bit lemon, dry on the palate, very refreshing, no carbonation, I really like it.

Draft et bouteille de 75cl de Malt Attacks. Dorée léger trouble, col blanc retombant assez vite. Arôme est excellent mettant bien en avant des effluves de lambic, boisé, léger vin blanc. Palais est léger sur des notes rustiques de malt pils, avec un agréable ajout de lambic qui bénéficie fort bien de la maturation en fût. Retrouve un léger funk qui est bien balancé par la bière de base,c ette dernière est bien fruitée avec un corps rond et de belles pointes céréales.

28-09-19 // bottle shared at Mon Petit Cafe Suttgart on Zwanze Day 2019. Hazy yellowish with little sediments. Mild funky saison nose. Funky sour medium. Full mouthfeel but quick fading after swallowing. Light dry tannins in the finish. White wine aromas. Good.

Ermitage saison blended with 15% young Cantillon lambic, aged in white wine barrels. From tap at Hal 16 in Ghent. Mousy, thick, snow white, opening, bubbly head, misty apricot blonde robe with deeper ochre-ish tinge. Aroma of sour plums, green gooseberries, dry Chardonnay wine, sweaty Brett funkiness from the lambic, sour apples, grape peel, wet wood, damp hay, unripe peach, rhubarb. Sour onset but countered by a soft, indeed ripe grape-ish sweetishness, gooseberry and green plum impressions too, a bit acidic on the edges but nowhere too much, medium carbonated; soft, supple, bready malt ‘soil’ dried by tart lactic sourness as well as tannic and fruity-sour effects from the wine barrels, further adorned by notes of hayish and sweaty lambic funk, yet remaining very fruity and estery and in that sense very highly drinkable. Lovely ‘bière de coupage’ or ‘versnijbier’ indeed – and probably my first one outside of the lambic world as such which contains Cantillon. The Cantillon lambic must have eaten much of the original saison and gets accentuated by the tannins and tartness of the wine barrels too, so that the whole, in spite of containing ‘only’ 15% lambic, is in fact more lambic-y than strictly saison-like in terms of actual flavour. Apparently here is a second, fruited version as well – I must taste that one too somehow…

5 July 2019. At Dok Brewing Festival. Cheers to Anke & Ghent beer crew! Clear yellow, quickly thinning, frothy, white head. Aroma of gooseberry, wheat, lemon peel, young mandarin, yellow apple, yeast, pepper. Taste is medium fruity sour, lots of gooseberry, starfruit & lemon, sweetish apple with a bready touch, bitter accents of grass & straw leading to a dryish, grassy hoppy finish, with lingering sour yellow fruit, lemon & yeast, a bit more bitter & grape-like in the very end. Medium body, slick texture, soft carbonation. Great flow of tastes.

Hazy amber colour, white foam. Nose of grassy, peppery, lemon, funk, lambic. Taste is rather tart, bit herbal, funky lambic finish. Nice!

Little hazy light orange beer, small creamy irregular white head, unstable, bit adhesive. Aroma: peaches, candy, fruity, vinegar, acidic, little dirty. MF: ok carbon, medium to light body. Taste: pretty sourish, lemony, soft bitterness, fruity. Aftertaste: bit watery, acidic, vinegar, dry.
