Beavertown and Dogfish Head’s world collide. The brew concept is based around digging into the Berliner Weisse style of beer, as both Beavertown and Dogfish Head have a passion from brewing sours with our ‘Phantom’ series of sours and their Festina Peche, America’s first sour beer. We took London as the inspiration to drive the conception of the ingredients and built the recipe around the botanicals infused within the beautiful and worldwide famous London classic, Gin. For this we worked with our good buddies East London Liquor Company. They brought to the table Cubeb pepper, Juniper berries, pink grapefruit and Darjeeling tea. From Dogfish’s angle Sam flew over some dried orange flesh that they use in their Namaste brew and also we looked to infuse a little cucumber as this is one of the key ingredients in DFH ‘Jin’ made at their in house distillery. Sam also flew over some of DFH fresh hand-picked Amarillo and cascade hops to add to the boil. So we used around 75% extra malt and 25% wheat as the basis for the grain bill. We mashed in, ran the wort to the copper and used a pure lactobacillus to inoculate the wort. We reached our desired pH level of 3.4 after around 24 hrs and went to pasteurise the wort. Holding the wort at 82c for an hour allowed us to now add our boil infusions. The Cubeb, Juniper and dried organic orange flesh were loaded into the boil along with a little of both the Amarillo and Cascade just to add further character to the wort. The beer is to be dry hop.

Sampled draft @ ACBF 2015. Hazy citrus, huge white head. Nose is fizzy sweet lactic gin, lightly medicinal. Taste is very interesting herbal, Berliner lactic in a good way, sweet gin, good soda, sweet yummy medicinal quality,… Bit fizzy. Very interesting & quite enjoyable & at this ABV. Highly impressive. cloudy peach juice color 3 finger solid white creamy head. Sea Salt, lactobacillus and wood with grape skins. Very sour, tart, almost intense like sucking on a lemon. gin undertones at the middle and finish. Sour pretty much dominates this one. I don’t get that much gin to be honest but the juniper is present with a long finish. dry as well.

Cloudy pale yellowish to very light beige beer, milky white almost. Aroma: very sour, lemony, bit funky, fruity notes. MF: ok carbon, medium to light body. Taste: very sour, wheat, grassy, grains, lemon juice. Aftertaste: vinegar, very high acidity, funky, bitter touch, some lemon zest. No balance here, just trying to be the most sour one. That's not the game...

Pale golden color with a white head. aroma has notes of citrus with some acidic. Flavor is very ight, slightly acidic with mild bitterness. Light and fruity final.

Keg at the Barton Arms; hazy straw yellow pour with a creamy white head, lemon aroma, taste has lip puckering sourness, lactic, lime cordial, some wheat, dry finish, nice.

Poured into a tulip glass showing a cloudy beige and sparse white foam. The nose seems to be quite bretty with subtle malts. The palate is light bodied with light-medium carbonation. It is overwhelmingly sour - very little other flavors appear except a round malt sweetness at the end that is subtle and barely perceived. Lemon juice plays the forefront on this one.

Tasting at Craft Clerkenwell. Keg. Hazy gold beer, small pale cream colour head. Palate is light and pretty dry. Mild light crispness. Light dry seltzer. Lemon led fruity sourness. Pinch of sherbet. Dry finish. Very dry, sucks all moisture from my gob.

Keg at the CP&K, 05/01/15. Lightly hazed orange with a decent off white covering that dissipates to spotting. Nose is zingy citrics, lime jus, straw, light spice, lemon rind. Taste comprises sharp lime juice, touch of gin spice, grain, herbal notes, lemon rind, tangy citrics, light acidic strokes. Medium bodied, fine carbonation, crisp refreshing close. Solid ’Linner, good balance, good level of acidity, top gear.

Keg at CASK Pub & Kitchen. It pours hazy golden-orange with minimal head. The nose is fresh, big floral notes, daisy, juicy, coriander, funk, creamy and lactic acid. The taste is crisp, clean, tart, lactic, peppery, floral, lemon & lime, straw, toasty grain and some acidity with a drying finish. Light+ body and fine, prickly carbonation. Crisp, clean and refreshing. Nice botanical character. Delicious.
