Hoppy Cedar-Aged Ale

El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

On tap at Basement Beer Bar. Not sure which batch as the keg didn't say, but it's at 7.8% ABV, from December 2022. Delicious fruity and funky aroma, peppery, tropical, citrusy. BTW, it looks nice too, unclear pale orange colored body under a dense two finger white head leaving curtains. Challenging to pour according to the barman,. The flavor has some pale malts, but it's mostly on the fruity side. Peachy, peppery, citrusy, funky and lemony, with some leather and barnyard. Gooseberry hints, melon, herbal hints, grapefruit zest and orange. I can sense the cedar, but I think I'd prefer it accentuated. It's close to full bodied, faintly sour, and gently carbonated. Everlasting finish. Would like a bit more pronounced aroma, but it's sure a wonderful beer. Quenching and tasteful. 230807

Draught@TCBW2018. Yellow colour with a mediumsized white creamy head. Aroma is cedar, some sour/tart wooden notes, citrus, tropical fruits and lactose. Flavour is grapegruit, cedar, tobacco with mild wooden and some tropical fruity tones. Nice bitter finish and aftertaste.

Batch 11. A lightly hazed golden amber ale with a thin lacing white head. In aroma, sweet fruity malt with light musty character, light woody notes, light Brett, very nice. In mouth, a nice sweet fruity malt with coriander, light pine, light curacao, resinous hops, very nice and smooth. On tap at Lupulus.

750mL bottled Nov 2018, batch 10, drunk 7/29/22. These are usually gushers but this one just an ever-so-sliw one. Didn't seem to disturb the sediment, thankfully, as it's clear with a massive, white head. Golden-brass-honey. Just about a perfect Brett expression with a very even, hickory nut-lime rind that allows for plentiful minerality, dainty, how net-like malts and a tastefully done, light amount of cedar. Low acidity, no alcohol or flaw. Extremely aromatic. Phenomenally balanced, flavorful, malty, well-attenuated with dainty, honey-rich malts, balancing Brett acids and very light cedar wood. These older Jester Kings, when preserved properly are about as good as it gets. The malt takes front and center here, with complements from Brett, mineral and cedar, as it should be. For 13.99, I will be getting more of these. No oxidation whatsoever. There's so little cedar here and this reminds most of great batches of Orval.

Bottle. Moderate gusher (although going back to the restoppered bottle in the fridge for another glass the stopper has been blown off and the bottle is full of foam). Clear gold with a large white head. Funky aroma of old oranges, boot polish, pineapple. Dry, a little tart. Late summery citrus. Bitter herbs as well as hops. Woody and spicy at the end. --- Beer merged from original tick of El Cedro on 23 Apr 2022 at 13:50 - Score: Appearance - 8 | Aroma - 8 | Flavor - 8 | Texture - 8 | Overall - 8. Keg at Ghost Whale, Brixton. Marmalade citrus aroma with a vinous streak. Cloudy amber gold. Creamy blotchy white head. Tart. Sour. Vinous. Grapes and a hint of grains. Light-medium bodied. Slick. Average carbonation. Long dry astringent finish. Doesn't miss the mark - hops and sourness.
