This beer is aged on new Missouri oak. The wood has a medium toast, which helps to caramelize the sugars in the oak and adds a nutty character to the beer as it soaks into the wood. Leave the corkscrew in the kitchen drawer and pop open a beer that will reward you with more flavors than most wines can dream of.

Sample of 2006-2011 vintages at the Blarney Wine tasting on 03/16/2013. The 2009 was my favorite of the bunch. Murky brownish-amber color with a medium light beige head that dissipates steadily. Rings of lacing. The aroma is oaky with malt and vanilla notes. Full-bodied with flavors of caramel malt, oak, vanilla and raisins. The finish is sweet with an oaky vanilla aftertaste. Good beer all around.

From a 75 cl bottle shared at Canaan Valley. 2007 vintage. Pours dark amber with an off white head. Caramel in the nose. Vanilla, toffee and some roasted nuts. Bitter finish.

Bottle from John’s Grocery. 2011 vintage. Pours clear copper color with tan head. Aromas of molasses, dark fruits and oak. Sweet molasses flavor with plums and raisins with some oak. Medium to full body with minimal carbonation and a syrupy mouthfeel.

From the July 3R6P tasting. +++ Sampled form a 750 ml brown bottle this beer poured a caramel-brown color with a medium sized foamy tan head that left decent lacing. The aroma was sweet caramel, dark fruits and molasses. The flavor was tangy pine, strong toasted caramel, molasses, wood and pineapple. The finish was tangy and tart pine, grapefruit, caramel and bread. Moderately full bodied. Excellent.

Bottle courtesy Alex. Creamy white good mostly lasting head. Dark amber colour. MOderate malty and hoppy intense aroma. Moderate bitter very powerfull flavor. Vanilla notes. Long great finish. Creamy palate. Great stuff.

At Chriso pre-GBBF tasting 2011. Mid amber colour thin beige head. Coconut. Some barleywine heat. Coconut and raw alcohol. Too much raw alcohol. Too much. Some barleywine style tangerine tripel flavour.

750 ml bottle, 2006 vintage. Popped after the Cards won the World Series! Pours with a bright brown malt, a little cloudy. Kicks up a good head upon pouring into my small chalice, a good sign in a 5 year-old beer, even if it’s gone after a minute. Smell carries a little sour tang, and a bit of fruity ester, but also a nice whiff of caramel malts. Taste is light in alcohol, carries a little more sourness, but not the brett one might get from a used barrel. Instead this is light on the palate, though there’s a good coat of malt on the tongue itself. Right up there with a Bigfoot, though I’m guessing by what’s left of the hop bittering, that is is intended toward the English side. I didn’t think I could finish this all tonight, but it’s slipping down very quickly. Nice way to celebrate a victory by my second favorite baseball team (that is, "Whoever plays the Cubs!")
