Pour arriver au résultat actuel, deux ans d’expérimentation et pas moins de 18 brassins ont été nécessaires ! De nouvelles bières sont en fabrication. Patience…
La Chatte : pourquoi ? Une longue histoire à lire jusqu'au bout…
D’abord elle a été conçue à Neuvillers, petit village ardennais. Au XIIe siècle, les moines de Saint-Hubert jugent bon de lui donner un nouveau nom, "Novum Villare" qui deviendra «Neuvillers» en français et «Nuviè» en wallon. Dès cette période, Neuvillers possède un château que l’on dénommait "tchètreuil" d’où le surnom de "tchèts" (les tchèts d’Nuviè). Ce surnom colle bien à ses habitants et à notre bière. En effet, le chat aime préserver son lieu de vie et choisir son propre chemin. Lorsque plusieurs chats partagent le même appartement, il n’est pas rare de les voir choisir chacun leur propre "chemin" pour aller d’un lieu à un autre. C’est exactement ce que notre bière produit après quelques verres…

Flesje gedronken tijdens vakantie in de Ardenne.
Donkergeel tot oranjeachtig troebel bier met matig schuim.
Aroma is moutig en licht kruidig.
Smaak is bitterzoet en toch fruitig (banaan, appel).
Nasmaak is een beetje bitter.

Bière 75 cl ramenée par mon frère et bue à la maison. Bière bien ancrée dans les traditions brassicoles de sa région d'origine, incarne avec fidélité le profil caractéristique des bières belges. Cependant elle ne se démarque pas de manière significative. Notes de levure, touches de céréales, une blonde belge réussie.

33cl bottle from Carrefour @ Cours St Michel in Brussels. F: medium, white, average retention. C: gold, hazy. A: malty, vaguely fruity, bit honey, floral, bit spicy. T: malty, some banana, bready, pear, bready, peach, bit mineral, mellow fruity, medium body and carbonation, not bad, enjoyed.

Bottle from Carrefour in Ninove. Pours clear dark golden with a lasting, very thin, frothy, off-white head. Aroma of honey, orange peel, peach, hay, onion, grass, white bread, pineapple juice. Taste is medium fruity sweet, notes of pineapple & orange, banana too perhaps, on a bready & honey-like malty base; light to medium spicy bitter middle has grass & early floral hop bitterness, quite yeasty too with vague sourish wheat. Dry, floral hoppy finish, bit yeasty & grassy, lingering orange & honey. Medium body, slick texture, fizzy carbonation. Quite 'correct' & nice to drink but not very special. By the way, the ABV on the label noted 5.69%, and 'Chatte' or 'Foefke' is not your average house cat. Pervs!

Bottle @ home. Dark golden color (turns vague ugly dark orange after pouring in the last bit), average sized white head. Smell and taste malts, slightly herbal / spice notes in the background, initially a bit sweet, going towards a little bitterness in the finish. There's an underlying fruity note here as well, might be banana-ish with a touch of orangepeel. Decent to medium body and carbonation. Meh.

Bottle from Walonia, haven't ever encountered this Brewery in Flanders, so surprised to see it's got a Flemish alias. Anyway. Pours darker, unclear blonde. Medium, unstable white head. Smell is yeasty, but also shows a mild offering of hops ( spicy, floral hops,rather than the fruity american ones ) . Some esters, of course. Taste is sharp, surpringly bitter, phenolic, more so than estery ( even though its still banana-like estery as well ) some raw DMS-like features though, combined with the overly yeasty factor, it displays a milder ( luckely ) 'rotten' taste. I've encuntered this before, and i'm glad it's only mildly present here.

Bottle. La Chatte. Color: Dlightly hazy golden, frothy white head. Aroma: Yeast, malt, hints of orange and yellow fruit. Taste: Yeasty, malt, medium sweet, moderate bitter. Notes of banana, hints of orange. Somewhat more bitterness at finish. Medium body, average carbonation. Average Belgium Blond, nothing more, nothing less.
