Made with three varieties of apples, Domaine Lafrance is a complex ice cider made with cryoconcentration.
Cryoconcentration: apples are picked when mature, and then they are frozen before the pressing. After, the juice is frozen outside to extract the concentrate. Finally, this concentrate is placed in a wooden for a six month fermentation.
Domaine Lafrance is sweet, smooth and liquorous, with fresh apple aromas. Taken with an entrée, the dessert plate or a fine old Cheddar. Foie gras, pâtés and terrines, tarte Tatin, apricot mousse and dark chocolate.
One 375 ml bottle of ice cider requires 12 or more kilos of apples, or the equivalent of 60+ apples.
Serve chilled.

Small 4 ounce bottle, dark yellow nice legs. Smells insane. Sweet cherry, raspberry, persimmon and pear. Insanely sweet, high residual sugar content, I mostly get granny smith apple, pear, finish of raisins and currants.

Clear warm golden colour. Aroma of apple, sweet apple, pie, bit spicy. Sweet apple flavour, treacle, syrup. Flat, quite viscous. Finish lingering apple, quite sweet, treacle. Nice. I’m quite a sucker for ice ciders.

Bottle 5 cl thnx to a canadian friend ! Pours clear blonde . Smell is thick, sweet applesauce, with a touch of wood almost . As if it had a perios of aging ( on the bottle , perhaps ? ) Taste is thick, gentle, sweet, bit sharp in the end . Sticky ( as it should be ) with a nice intensity . Yet another damn fine ice cider ....

Thanks to tom10101 for this one! 5 cl. bottle, gorgeous packaging. Split with Martinus @ ZBF 2014. I am having a hard time describing ice ciders so far, I keep winding up with the same words. Pours a clear golden. Intense apple aroma, very sweet, lots of fructose and sugar in the nose, sweet spices, pie. Huge apple taste, explosively sweet, sticky sweet, cinnamon, apple pie, spices, very sweet apple sauce. Sticky, touch agave-feel to it. Mmmmm…..

Bottle split at CBC during the Martin T tasting big thanks to Martin himself, 06/06/13. Clear golden with no head. Nose is apples, light booze, hints of berry fruit. Taste comprises fresh apples, light sugars. Full bodied, fine carbonation, sweet finish. Good stuff, the alcohol is well integrated.

Bottle. 11ABV. Wonderfull dark yellow colour. Fantastic nive powerfull apple aroma. Truli magnificient apple flavor. Long intese finish. Creamy palate.

Bottle: Poured a deep golden color ice cider with notes of sweet apple juice. Aroma is not the most complex though quite enjoyable with loads of sweet apple notes. Taste is also dominated by sweet apples with no complex ester such apple pie. Alcohol is very faint and almost not perceptible. Not my favourite but enjoyed nonetheless.

Bottle 375ml.Clear medium yellow orange color with virtually none head. Aroma is moderate to heavy apple, wood, vanilla notes, light alcohol. Flavor is light heavy sweet and light fruity - apple acidic with a long duration. Body is medium to full, texture is syrupy, carbonation is flat, finish feel is moderate alcoholic. [20100219]

Bottle @ Fastelavnssmagning, Ulfborg. Pours clear golden with no head. Nose is lovely complex. Red apples and fresh grass. Sticky and oily. Low carbonation. Fruity and ripe red apples. Vague warmth. Complex and very tasty!
