A Belgian ’saison-style’ ale brewed with cocoa powder and chili pepper? Ay, Caramba! Score another first for the unpredictable brewery that was the first -- and so far the only - brewery to make ales out of dandelions and mushrooms, among other things.

Bottle split at the Autumn Watford tasting, thanks to Leighton, 24/09/21. Hazed amber to marmalade orange with an off white cap that thins to a swirl. Nose is dusty fruits, cocoa sprinkle, yeast esters, grains, toffee. Taste comprises grains, orange peel, cocoa dusting, grass, herb, toffee, yeast esters. Medium bodied, fine carbonation, semi drying close. Not bad ... better than I'd expected.

Bottle shared in Watford - sourced from Etre. Pours unclear orange-good with a strong, creamy yellow-khaki head. Medium sweet flavour, pleasant saison yeast expression, lightly toasted wheat, some citrus peel. Medium bodied with fine, massaging carbonation. Balanced finish, more wheat, yeast, a little candi sugar. Pretty decent overall.

Bottle from Etre Gourmet. Color: Lightly hazy orange-brown, large frothy off-white head. Aroma: Spicy, yeasty, cocoa notes. Taste: Yeasty, spicy / peppery, malty base, cocoa. Subtle notes leaves (floral) and dark fruit. Long lasting yeasty and spicy finish. Somewhat more pepper than cocoa. Over medium body, average carbonation. Interesting. Nice, typical Fantôme.
