Sitting in the Frankfurt airport terminal waiting for a plane to Turin may not be the most inspired location to write this label, but we jetsetters do what we must to meet deadlines....
This was a ton of fun to brew. So far, the most memorable part about it was sampling the first wort which had been mashed with lots of specialty grains and about 250 lbs of pure cocoa. It was amazingly smooth, velvety sweet, and rich with chocolate. I felt like I was tasting the luscious sweetness of a chocolate river. There’s gotta be a market for this, I swear!
I can’t wait to taste this finished creation that sprang forth from Jason Fields and Kevin Sheppard’s delicious homebrew. The cherries, a blend of dark and tart, will be added in a few days, and should make this a truly remarkable stout. It couldn’t have been done without the help and expertise from John Trogner, brewer of great things at Tröegs in PA and longtime friend of our own Bill Sherwood. It’s our second time brewing with fruit, and our second time brewing with chocolate. Second time’s a charm (just like the first time)!

Draught @ Moeder Lambic during the Stone vs Moeder Lambic event. Pitch black with a lovely brown head. Smells chocolate, cherry and legendary. Tastes chocolate, cherry, perfect, godlike. Full body. Wow.

12 oz. bottle, pours jet black with a small ring of light brown head. Both the chocolate and cherries are noticeable on the nose, with perhaps the chocolate more upfront. On the contrary, the flavour brings out the cherries more so with the chocolate acting more as an undercurrent. Smooth, roasty and sweet from the cherries on the palate. Alright, though I don't usually like fruity stouts much.

Mocha nose, the coffee aspect is more prominent than the chocolate. Black used motor oil pour, medium brown head, some glass adherence. I’ll be damned if it doesn’t taste like liquid cherry cordials. The chocolate notes are certainly more of bitter dark variety than milk. Medium body with good balance. More cherry in the end than chocolate, but transitions are not distinct. Good, but kind of gimmicky, which have been the way Stone’s newly released beers have been heading lately. Masterfully well crafted as they really achieved their objective.

Draught at Chez Moeder Lambic Fontainas during the three day Stone Event, 16-18 september 2011. Pitch black opaque color, brown head. Smell sweet, chocolate and cherry. Taste fruit, chocolate and something sweet: like chocolate mixed with cherries and raisins. Complex brew I guess, but just not my thing. Decent carbo, medium body.

Draught at Moeder Lambic, Brussels, for the Stone beer festival. Sampled on September 16, 2011Black color, dark brown head. Sweet, vinous, raissin, chocolate, fresh scent. Smooth, sweet, cocoa, raissin taste. Sweet, coffee aftertaste. Some chocolate dessert as well. Smooth mouthfeel, gets some sweet cherry chocolate candy notes. Low bitterness.

Draft @ Stone vs. Moeder event, Moder Lambic, Brussels. Noire foncée, col épais moka. Arôme de malt, grillé et biscuité chocolat est épais avec une touche de cerise noire restant un peu en retrait. On a ici, une stout qui laisse passé tout ce que un chocolat noir et du cacao ainsi que des cerises ont à offrir. Une touche de levure à noter. En bouche, une bière qui trouve toute sa dimension une fois que elle s’approche de la t° ambiante. Palais est épais de chocolat noir, intense et pâteux avec la cerise qui rappelle le fruit confit du boulanger, mais garde ce côté frais et mûrit avec une pointe d’aigreur de cerise mais qui se fond dans l’épaisseur du chocolat et pétale de cacao.

Draught Shards of amber lace, over black beer. Vanilla, chocolate, cherry-filled chocolate, bit flowery (for a stout!). Dry woody-bitterish flavour. Bitter chocolate, some brandy impression, and coffee cream. Very well-bodied, viscous, alcoholburn. Excellent chocolate stout, but somewhere I miss the fruitiness the cherries ought to convey.

Bottle. Black with tan head. Nose of chocolate covered cherries, fudge and dark chocolate. Some hay in background. Taste is same. Lots of cherry in the finish. Medium body.

Bottle from Beer Revolution. Pretty, bubbly brown head on black beer. Nose of cherry, coffee, chocolate. Ok. Flavor of wood, cherries, dark chocolate, coffee. Rather roasty with light cherry sweetness. A strange combination. Too sweet.
