Midway between a Belgian blonde and a triple, its pale sweet malt notes never fail to charm the palate.
Brewed for the first time in the summer of 1996, its name was inspired by a nun who, after tasting a beer for the first time, said it tasted better than holy water (eau bénite in French). Amen.

Bottled. 33cl. Volcanoed out of the bottled. Orange, with a small white head. Sweet, fruity aroma with citric notes and some coriander. Sweet, malty flavor with grapefruit, pineapple, pine-cones and some alcohol. Sweet bitter finish and lightly astringent. A very drinkable beer. Rating: 7-3-7-4-14-3.5. 060422
Bottle, 75cl corked. 2005 vintage. A clear one, golden in color and with a small, dense, white head. Lightly cellary nose, with sugary fruityness, peach hints, a touch of alcohol and some lightly piney hints. Rather carbonated, full-bodied and quite dry, with flavors of sugary fruityness, peaches and some bitterness. Lightly warming too, and both bitter and fruity in the finish. Certainly a nice beer, even after seven years of cellaring. 120406

Hazy dark orange, not much head, lively carbonation. Strong vinegar, yeast and molasses aroma.Fruity (plums) and yeasty Belgian type ale. Sweetish, alcohol picks a bit up in the finish. Quite delicious, but could be maltier and fullier ... maybe.

(Bottle 75 cl) Pale golden, hazy beer with a tall head kept up by an incredible carbonation. Yesty sediment. Very fruity with notes of wheat and a soft spicing. Very full-bodied but the strong alcohol is only warming - not unpleasant. Very classical triple. 300604

Undated (probably 03) 11.12 oz bottle. Good golden/yellow pour, with some light tangerine tinges and a good sized white head. Aroma has tons of yeast in it. LIghtly spicy and has some sweet citrus notes. Flavor is a bit dull though, quite subtle, with some lightly tart notes, tons of yeast and a chewy mouthfeel characteristic of a belgian wit. Not overly sweet at least, but just not terribly complex. Dry, a bit thin as it warms, but pretty drinkable.

Super hazy golden coloured body with strong orange highlights and a large, soapy dense off-white head. Aroma of coriander seed, lemons, curacao, yeast and some pepper. Medium to Full-bodied; Initial spicey character with the pepper and coriander seed showing through, followed by a bit of a sweetness and capped off by a dry bitter finish. Aftertaste has some of the pepper and a slight amount of yeast, but fairly different in complexities than their other tripels. Overall, a decent beer, but not impressive to me, and it took me very long to sample it, because the brewer and similarities among product lines don't thrill me. Not really worth buying, unless you can't find any 'decent' american produced tripels (try Allagash, Victory, Weyerbacher, etc). I bought this twelve ounce bottle from Beers of the World in Rochester, New York and sampled it on 12-December-2003.

Cloudy yellow golden color, medium white frothy head. Spicy and slightly cheesy yeast aroma, hint of banana also. Spicy and yeasty taste. A triple with a hefeweizen undertone, more comparable to the Hoegaarden Grand Cru.
