Soak: our line of sour wheat ales, aged in oak, featuring a variety of single fruit additions. We ferment the base beer with 60% wheat in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we referment fruit in the base beer after primary foeder fermentation to “soak” for a deep extraction of unique colors, aromatics, and flavors. Delightfully acidic, but not funky, our Soak series is an approachable sequence of wild offerings that we are proud to share.

Eye catching dark pink in appearance with light haze, Blueberry Soak has a lively nose with aromas of pressed concord grape and bramble fruits. Flavors of ripe blueberry and raspberry lead on the palate with a touch of tart lemon zest. Blueberry Soak has a delicate tannic structure and a subtle wheat grain backbone with undertones of wet oak. Features a light body and clean, semisweet finish with a refreshing champagne-like carbonation.

330ml bottle. Smooth, sourish and slightly oaky with some blueberry juice, vinegar and stingy tartness. Okay.

Bottle picked up at brewery a while ago: pours bright maroonish with a pinkish head. Aroma is blueberry and wine soaked wood and cork. Taste is somewhat sour, very full of blueberry. Not sweet. Woody. Nice finish.

Bottle thanks to Dave. Pours a cloudy orange ruby with medium off white head. The aroma is strong funk, berry, oak, cherry skin. Thin body, blueberry, funk, oak, nice tartness, very nice.

Bottle shared at the Columbus tasting, 25/07/2018. Many thanks. A hazed reddy blue coloured pour with a hazy pink head. Aroma is petrol, blue berries, , petrol, waxy. Flavour is composed of prickly cranberry, blueberry, funky lacto, prickly tart. Palate si semi sweet, prickly. Nice stuff, just a pinch of acid.

Bottle split at L6, thanks to Leighton, 25/07/18. Lightly faded cherry red with a decent off white to crimson cap. Nose big funky berries, damp straw, lemon rind, blueberry tang, light acidic nostril tickle. Taste comprises blueberry yoghurt, soured plums, stoned fruits, funk, damp hay, barnyard esters. Medium bodied, fine carbonation, semi drying close with a puckering acidic rise. Solid sour.

Level 6 Bottleshare. Thanks to Leighton. Hazy pinkish orange beer, small pale peach colour head. Smooth palate, fairly dry. Fair bit of acetic burn, little lemon. Tart lemony blueberry on the back end. Okay if quite acetic.

Bottle thanks to LKS - cheers bro! It pours hazy blush - purple with a small whiteish head. The aroma is blueberry skin, plum skin, musty, sherbet, sour candy, tannin, juniper and vinous vibes. The taste is crisp, dry, tart, bright, blueberry, acidic kick, sherbet, plum, damson, sherbet, Granny Smith apple and wood with a dry, spritzy finish. Medium body and fine carbonation. Bright and punchy. Nice.

Bottle shared in London - sourced via trade. Pours unclear pink with a small, frothy white head. Nice aroma, light jammy berry character. Light sweet flavour, strong acidity, more berry tartness, mild bitter seeds. Medium bodied with spritzy carbonation. Quenching finish, assertive acidity, more tart blueberries, lemon, mild woody dryness. Good stuff overal, if a bit strong.
