Our house saison, brewed with pilsner and wheat malts, Sterling & Saaz hops, & fermented for two months in a French oak foeder with our house yeasts & bacteria, is both simple and complex—just what we look for in a good saison. Drink liberally with friends or for occasions, but don't wait for either.

750 ml bottle. Pours a murky tea-like brown with little head. Aromas of new leather, sweetened citrus, herbs, and BO. Flavors of overripe fruit, oak, wheat, and farmhouse yeasts. Bit of an odd jumble. Not coming together for me. Bottled 2018 so may be past it's prime...

Bottle, 750 ml. Shared with Max, Miro B and Cvrle. Clear golden, white head. Fruity, funk, vinous, easy drinkable. Medium+ carbonation. Simple but tasty.

Bottle: Poured a light yellow color ale with a large white foamy head with excellent retention and great mount of lacing. Aroma of funky saison yeast with some great rustic malt notes. Taste is a wonderful mix of great saison yeast notes with some dry undertones with some rustic malt notes and multigrain cereal notes with a dry finish. Body is about average with good carbonation. World-class saison and possibly the best saison brewery in the country.

Clear golden colour with lasting head. Aroma has a nice musty, winey note and a barnyard element too. Tastes really dry. Quite light and easy to drink. Most of the complexity is in the nose.

A hazed blonde saison with a thin white head. In aroma, sweet fruity malt with light Brett, fruity esters, light Epsom salts, light thyme, very nice. In mouth, a nice sweet fruity malt with light lemon notes, thyme, Epsom salts, light Brett, very nice. Bottle from Keepsix LCBO private import. Tasted at spring OttBottShare 2019
