Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends.On March 20th 2018, we filled two freshly emptied Vin Jaune barrels of Domaine Pignier with young 3 Fonteinen lambic. The lambic was brewed on March 16th 2017 and was 13 months old upon filling the two barrels. We let the lambic sit for another good year before we bottled seperately. As such, there are two batches of this unblended vin jaune lambic.Taste, savour and experience with the best of friends, old and new.

Bottle at Moeder Lambic. Pours golden with no head. The aroma is walnut, funk, wood. Slick body, funky, walnut, pistachio, wood, light tartness, very nice.
Brighter, more tannins, tart, low/medium carbonation
Another lovely Speling. Dry, slightly sour, mineral and funky lambic, aged in vin jaune barrels. The barrels give a nice fruityness, with something lightly sweet vinous and a hint of soft stone fruit. Lovely, complex.

750 ml. bottle @ brewery. Flat basically, needed plenty of time to breath. Almost more Vin Jaune than lambiek, fruit wallnuts, grape, oily, sweet oxidation, little funk, Vin Jaune totally dominates which is fine with me given how tasty the whole is.

Bottle. Clear blonde color. Vinous, oaky aroma with some noble rot. Sweet flavor with grapes, noble rot. Almost Sauternes-like aroma and flavor. Lemon. Refreshing. Complex.

Bottle shared at OBD. Clear golden, no head. Soft grapes, nice vin jaune, nutty, wheat, apple, apricot. Super fruity and nice vin jaune. Medium sweet and bitter. Over medium bodied, no carbonation.

Near clear golden with no head. Aroma of oak, oxidization, vinous notes and grapes. Flavour is moderate sweet and sour. Medium bodied with near flat carbonation.

Thnx to 77Ships ! Pours a clear pale, bit darker blonde/golden. Smell is quite unique. Oaky, lambic funk, but nowhere near what i'm used to in a 'classic' lambic, nor do I recognize Vin Jaune in this. it's not really nutty or oxidative, yet strongly... perfumed ? Taste is sharp, dry, it has a certain grape fruityness. Oxidative notes are very mild - if any. It's perfumy though ! little tartness, no acetic acid here. Not bad at all, but not even close to what I had expected (or hoped for)
