It happened again……. the story of the So Sori Julio Saison.
It was that time of year when Julio went on a summer holiday and left us in charge of the brewery. London Craft Beer Festival was on that weekend and our friends from the Sori Brewing Company from Tallinn, Estonia were in town sharing their awesome beers with everyone at the festival.
All the guys from the brewery went to Bethnal Green to soak up the atmosphere and obviously try lots of beers. It was a great weekend, we met some cool people and made some new friends.
Just before everyone made their merry way out the doors at the end of the night an idea was formed, not the most thought out idea considering everyone’s haziness but an idea none the less. The guys from Sori were going to come over to the brewery and help us brew a classic Saison. Brew By Numbers who were also at the festival, kindly let us draw off some yeast from the bottom of their fermenter that morning which had just finished fermenting their Saison.
This meant a very early start after a very late night but everyone was still keen. The 3 litre bottle of yeast made it across London on the underground without exploding on the unsuspecting rush hour passengers. The beer turned out great, fermented right down to 1.003 which gave us a final ABV of 4.8% and “So Sori Julio” was born.

[ As Moncada / Sori So Sori Julio Saison ].
ABV: 4.8%. Cloudy medium yellow orange colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, wheat, moderate yeasty, saison yeast, fruity yeast. Flavor is moderate sweet with a average duration, wheat, saison yeast, fruity yeast. Body is medium, texture is oily to watery, carbonation is soft. [20180803]

Keg at LBA. It pours lightly golden with a medium white head. The aroma is grassy, straw, nougat, cereal, spice, hay and pear. The taste is crisp, dry, bitter, peppery spice, metallic, floral and earth with a drying finish. Medium body and fine carbonation. Dry and quaffable.

Keg at the London Brewers market. Light hazed golden orange coloured pour with a fine white head. Clove and banaana wheat on the nose. Flavour is crisp and chalky, clove phenol,. Palate is chalky highish carbonation. Meh.

On tap at Moncada tasting room Dollis Hill. Gold colour slight haze lasting cream head. Some dry funky saison aroma. Good dry saison biscuit flavour in the mouth. Some lemon and peach flavours. Some bitterness on the finish. . Decent saison

Keg at Moncada Tap Room, London, Friday, 11th December 2015 Pours yellow gold with a sticky white head on top. Yeast on nose but with a goodly dollop of fruit, notably some light wafts of sweet orange aromas. It’s a really nice saison, fruity in the mouth a light rustic touch from the yeast, nudging towards citrus with a dab of sweet orange again, but a slightly tangier bite. Really liked it. Keg at the brewery taproom. Pours clear gold with a creamy white head. The aroma holds some peach, tangerine, saison yeast, light melon, esters. Light sweet flavor with pleasant citrus notes, pale bread, wheat, yeast, lemon rind. Light to medium bodied with average carbonation. Finishes cleanly, with light rindy bitterness, some slightly tangy lemon, more tangerine, yeast, wheat bread. Nicely drinking, dry saison.
