The Kioke is an open cypress wooden barrel produced by Yasuo Yamamoto (Yamaroku Shoyu) in Japan, on the island of Shodo, and is used for the fermentation of soy sauce. Xyauyù was created in Piozzo, Italy, at the Baladin farm brewery, from Teo Musso’s desire to explore the universe of oxidation.
The beer, once fermented and aged for 18 months, is open-air matured inside a new Kioke barrel, i.e. which has never been used for the fermentation of soy. The barrel gives resinous cypress notes and a slightly acidic touch, for a unique aromatic profile.

500 ml bottle, Cardinal Pub & Bar, Stavanger. ABV is 14%. Brown colour, no head, no carbonation. Interesting and unusual aroma of soy sauce and exotic woodwork, also vinous notes with raisins and dark dried fruits. Very sweet and rich flavour, notes of raisins and dark dried fruits again, also oxidised soy sauce and exotic woodwork. Hardly any bitterness.

0.375l bottle thanks to Lore. Hazy brown body without any head. Aroma and taste of caramel, burnt sugar, whiskey, orange zest, chocolate and a bit of nutmeg. Low carbonation with a silky texture. Great one.

At Siris pop up bar. Pours dark, clear mahonie brown. Scent is full, chocolate oak, sweet, dried fruits, figs and raisins. Very bready. Taste is full, sweet, heavy. Intense, dried fruits, silky, intense cypress wood indeed. Full bodied, with a long lasting sweet, cypress, raisin and bready finish.

Dank voor t delen Kermis! Donkerbruin, dunne kraag. Cederhout, dennentoppen, rozijntjes, flink zoet, moutig, caramel, veel hout in de smaak. Aparte combi, maar wel een die redelijk werkt. Volle body. Smaakvol.

Brown with a tiny ring beige head. Aroma of malt, booze, brown sugar, wood, caramel, sweet toffee and light overripe dark fruits. Flavour is heavy sweet. Full bodied with soft carbonation.

Shared bottle. Pours a brown colour with no head. Aroma's of fruit candy, sweet. Retronasal it's sweet, schuimpjes, alcohol, wood. Flavour is heavy sweet, fudge, alcohol. Strong alcohol feel. Full bodied Long finish.

Cloudy amber. Big malty sugary nose, boozy and kinda salty, a little cheesy maybe. The taste is even less interesting - big sugars - nope, huge sugars! - loss of alcohol spice and heat. That all. It does not seem to have the oxidized nutty sherry complex notes of other Xyauyù beers.

Bottle at Beer Hunters. Dark nut brown colour, no head. Aroma is aged, rye bready, bourbon, sweetness. Full-bodied. Bready, sweet, white Madeira, bourbon, grapes. Complex dessert beer.
