The beer starts of as an Old ale. It's put to rest on barrels originally used for the Italian Chardonnay wine by Massolino, secondly used by De Dolle Brouwers to age their Dulle Teve upon. After that, these barrels were a gift ( thanks to the Beer Engineers) to Dylan & Amina.
The barrel-aged old ale was than blended with Oloroso Sherry by a defunct Bodega, bottled in 1985 (estimate) at a volume of 1.5 liters sherry per 8 liters of barrel aged beer.
The result is bottled without carbonation, to embody the characteristics of the wine and sherry. But just like any mariage, who knows what the coming years might give us?

No head to speak of; fully hazy brown beer. Light acetic nose, also lactic, sweet dessert wine, Oloroso. Quite sour, both acetic, lactic and lemon. Much less sweetness than the nose suggested. It appears less complex than it really is. Sharp acidburn, yet quite slick, no carbonation. Quite special. Refers to all its components, but because of that the balance is a bit precarious. Celebrational one-off, a wine barrel aged old ale infused with oloroso sherry, created for the wedding of Dylan (kraddel on this site) with Amina and briefly sold through Dylan's Siris project; now two and a half years of age so I guess the time was right to open it. Many thanks to tderoeck for the bottle! Some loose, large, greyish bubbles form during pouring and initially form a loosely knit and open 'head' but dissolve eventually (not surprising - this beer was bottled without carbonation); initially clear, ruddy-bronze robe with amberish tinge, turning cloudy to even murky and more chestnutty brown with sediment. Aroma of passionfruit, clear sherry indeed, ground hazelnuts, old and oxidized Chardonnay, maraschino cherries, ketjap manis, old oak wood, blackberries, red plum, hints of caramel, medlar, balsamico, medium rare horse steak (proteins), dusty cellar, crabapple, dry earth and dead tree leaves. Fruity, tart onset, a bit astringent with unripe stonefruit and sour grape impressions next to tart blackberries and wild apples gathered in a forest, essentially sweet and rounded but strongly dried by a red berry-like acidity; flat carb (intentionally) with rounded body, dry-caramelly, brown-bready and hazelnutty malts under severely drying tartness and 'wild' and earthy notes next to ongoing red sour fruit, passionfruit and medlar coming into the picture, before everything slowly moves into a more vinous direction, with a generally tart fruit wine-like effect - over lingering 'beery' maltiness and breadiness. Woody aspects with tannic effect further accentuate astringency and tartness, while oloroso indeed shows up retronasally, along with white wine gone sour. Earthiness in the tail, but the sour red fruit effects remain dominant, while a softly warming sherry-like alcohol glow sets in while something meaty (from proteins) vaguely lurks in the background. Quite astringent, in all, which, combined with the lack of carbonation, degrades drinkability a bit - but there is no denying that this is a complex construction, a beery base with strong wine inclinations; the nose and overall flavour remind me much more of an oud bruin ('Flemish red') than a true old ale the English way - as do lots of dark beers that have undergone some or other form of souring. Tart, rich, vinous, earthy, warming and original beer - so cheers to Dylan and Amina (as well as Tall Poppy of course) for creating this one, not quite meeting my expectations of an old ale but offering a quite unique and tasty sour ale instead.

Ambre, pas de col.
Arôme est délicat avec une bonne balance des diverses barriques - le Sherry ressort très bien, passe en retrait avec une fine note de sucre résiduel, des marques de fruits secs et une fraicheur plus marquée de la barrique de vin blanc.
Palais présente une effervescence assez flaiblarde ce qui a le don pour ce type de bière contenant du Sherry de marquer un peu plus le côté boozy mais aussi le fruité de ce vin cuit. Tout cela se marie à perfection avec les notes venant de la barrique de vin blanc ce qui vin ajouter une dimension supplémentaire de raisin, le tout présente tout de même un léger caractère 'sourish'.
Une bière qui navigue entre les styles - strong ale à la fois, old ale, barley wine.

Cloudy dark amber to brown beer, practically no head, just some big bubbles. Aroma: very oxidized, fruity, yeasty, quite some banana, caramel notes, alcohol, sherry, wine, a bit medicinal, chemical touch, meaty, game meat, wood notes. MF: ok carbon, medium body. Taste: a bit fruity, sourish, lactic acid, lemony, some oranges, juicy, dry, some tannins, lots of sherry. Aftertaste: dry, bitter, lemony, good, nice acidity, fruity, oxidized, some tannins, very decent beer!

Pours à dark, cloudy amber. Small formation if bubbles, but I wouldn't call it foam. Scent is strong, oak, has a certain sweetness, woody, thick, vineous. Taste is surprisingly thick, oxidative, amber malts, vineous, mild tartness. Very oaky, no real carbonation. Very nice brew ! Sherry seems to be toned Down compared to it's botteling stage. Curious to what the years will do to it!
