Cantillon CLAC (Trois Cépages) is a blend of 2- and 3-year old lambics with Cinsault, Alicante, and Carignan grapes. It is bottled in 75cl bottles and made its debut in 2020. The fruit concentration is 300 grams per liter of lambic.
The acronym CLAC stands for Cinsault, Lambic, Alicante, and Carignan, denoting the three grape varieties (trois cépages) and is the first Cantillon lambic to contain a blend of three different grapes. According to the brewery, each of the grape varieties were macerated separately and then blended together.

Cloudy purple color. Nice tart sweet cranberry and raspberries. But not a ton of depth. Rounded. Good carbonation. Nicely balanced but the grape isn’t so exciting. Still solid enough

750mL bottle at La Fruitière, pours a hazy bright red with a small white head. Aroma has musty grape skins, barnyard funk, and light acidity. Flavour is complex as hell, with a wonderful blend of red grape skins, plenty of barnyard funk, and light earthy mustiness. Wonderful grape blend and good funk presence. Excellent.

[2019 Vintage] 750mL bottle at La Fruitiere. Pours murky mahogany with a white head. Very musty nose, nice manure character. Flavour has a bunch of red wine grapes, rustic funk, not as much manure in the funk as the nose, and a hefty punch of acidity. Excellent.

On draft at Moeder. Opaque ruby/garnet pour with a white head. Big vinous bouquet. Tart and really sour with berry and vinous overtones. Sweet malts get lost in the mix. Probably needs to sit a while as it’s highly acidic and sour. Good body and mouthfeel.
