0,07l taster from 0,75l bottle at Moeder Lambic Original tasting. Vintage . Yellow hazy color, small white head. Smells herbal, flowery, very fragrent. Very nice smell. Full body, soft carbonation. Tastes herbal, flowery, chamomile, spices. Finishes dry and light to medium sour with notes of herbs, flowery and spices. Lovely, very complex

Bottle. Pours a hazy orange gold with small white head. The aroma is strong funk, wood, spice, citrus. Slick body, funk, wood, cardamom, light dry finish, enjoyed this.

Bottle. Opaque dark yellow pour with a fleeting white head. Barnyard and cardamom bouquet. Semi sweet with lemon zest, horse blanket, and beautiful barnyard notes. Hints of the cardamom. Really good mouthfeel and body.

Cardamom-spiced Cantillon lambic, made for restaurant Bon Bon in Brussels; the initials of the restaurant’s name are indeed “B.B.”, but I guess the name of the beer also refers to Brigitte Bardot, who shares the same initials… From a 37.5 cl bottle at Cantillon’s bar in Anderlecht. Snow white, mousy, irregular, open head on an initially clear deep ‘old gold’ beer with apricot tinge, turning misty as emptying of the bottle progresses. Aroma very strongly dominated by (black) cardamom, reminiscent of yellow curry power as well, largely but not completely overwhelming aspects of green apple, lemon peel, minerals, old dry white wine, something vaguely sulfuric (freshly struck match), dry hay. Crisp, tart onset, lots of sour grape and green apple impressions with a nice and refreshing lemony edge, very minerally, almost chalky undertone accentuated by spritzy carbonation; smooth white-bready core with lovely lambic effects of sour fruit and very dry white wine, but unsurprisingly completely overwhelmed by that very strong cardamom spicing, very ethereal, punchy and spicy – evoking Asian cuisine, curry powder and rice dishes. Lovely lemon-zesty sourness further edges this cardamom flavour, with some drying woody tannins in the end as well; ends bone dry with this perfumey cardamom element lingering about for a long time. I love this, but then I can take a lot of cardamom – if that does not apply to you, this is one to avoid, because cardamom really is the big star of the show here, to the extent that many will find it unbalanced. Still, the lovely qualities of Cantillon’s lambic get enough room to shine and play with the cardamom in my opinion, with a very special and interesting flavour combo as a result.

Pours clear, bit darker blonde. Scent is very intense cardamom, air freshener. Super intense. Overtaking the lambic completely. Taste is full, intense, minthy. Overly powerful spice. Air freshner. Not my favorite.

½ 375 ml. bottle @ brewery. Right about flat. High quality lambiek with little acidity and low funk, quite heavy on stone fruit, cardamon is massive, soft, rich. Highly delicious but if you like it depends entirely on how you feel about cardamon.
