Bière de Garde is a blend of three barrels from three contrasting brews produced in January, July and October 2018. The blend produced an easy drinking, dry, malt-forward beer with balancing bitterness and funk. The bottle fermentation included a phase led by lactic acid bacteria, known as ’sickness’, which produces extra weight and fullness to the mouthfeel. Bottled in November 2019, the beer was effectively lagered in bottle at cold ambient temperatures over winter, before completing maturation in the early summer months of 2020.”

750ml bottle at home. Pours opaque orangey brown with a frothy white head. Aroma: tart & oaky with some vinous vibes, light funky. Taste: light to moderate acidity, dry, gooseberry, grape, green apple, musty, very faint balsamic vibes. Medium bodied with frothy carbonation

Almost like a Boon with the sheer funkability. Super complex. Dry lambic finish. This is a fantastic example of a mixed-culture farmhouse style done properly. Extensive barrel treatment makes the Brett really shine. Amazing beer.

Bottle via Mills. It pours hazy orangey amber with a thick, foamy white head. The aroma is zingy, funky, lemon sherbet, sour candy, warheads, granny smith apple, grape skin, Bircher muesli, oak, light vanilla, custard creams, barnyard and baked goods. The taste is crisp, firmly dry, tart, zingy, puckering, white grape, gooseberry, granny smith apple, hay, musty, deep funk, mouldy basement, oak, barnyard, big sherbet character, refreshers, dib dab, blood orange, splash of Irn Bru in there and a touch of acidity with a dry, tart. Medium body and moderate, foamy carbonation. Tasty stuff, but I'm not sure I would clock this as a bier de garde mind you....

Bottle. Mills online. Opens with a poof. Lively pour sits mostly clear, pale copper gold. Noisy and thick, off white head stays the course. Nose has a pile of woody twang. Baked dessert apple. Sherbet fountain. Quince, according to the missus. Brett. Suede. Brett out of Suede. Probably. Taste is tart and pretty dry. Smooth and crisp at the same time. Big foamy carbonation. Touch of acidity. Nice bitterness to finish. Predictably good.
