An everyday drinking beer, borne out of a Wildly different concept

An everyday drinking beer, borne out of a Wildly different concept. Using our own version of a Solera aging system (most commonly associated with Sherry, Madeira, Port and other fortified wines), we’re creating a unique blended beer.

Although this Saison has had the same love and affection found in our most sought after barrel-aged beers, it has the simplicity and drinkability of a more sessionable beer.

Blending a young crisp beer and barrel-aged beer gives a long, distinct, authentic Wild Beer Co finish. This is a rustic spicy Saison with a barrel-aged aspect, funky yeast complexity, crisp yet round grainy fullness from local spelt and a European resinous hop character.

Keg at brewdog Shepard’s bush. Hazed onion skin colour with light relucany white head. Aroma tart raspberry earthy, carbonation. Flavour is less good, earthy root veg, light metallic finish. Wood twigs, some berry fruits. Lingering rough earthy bitterness.

Bottle @ Aarhus tasting. Clear amber with an off-white head. Aroma is sweet, malty, caramel, fruity and yeasty. Flavor is medium sweet and moderate bitter. Dry and moderate bitter finish. 170214

Bottle @ Johns, Pours slightly hazy golden with offwhite head. Aroma of malt, yeast, little spice, fruity hops, peach, little sourness. Flavor is malt, yeasty, spice, little fruity, light citrus. Thin to medium body, lively carbonation. 170214

Bottle, 4.4%. Hazy dark amber with medium tan head. Aroma is malt, caramel, yeast, fruit, little dusty and spicy. Flavour is malt, caramel, yeast, spicy, fruit, little dry, little earthy and a little bitter.

Bottle. Nice head with good duration. Color is amber. Aroma and taste are fruits, caramel, malt, hops and has semi high carbonation.

(Draught at Monk’s Porterhouse, Stockholm, 10 Jan 2014) Dark amber colour, hazy, with frothy beige head. Malty, spicy nose with notes of rye bread, yeast and earthy hops. Malty, fruity taste with rye bread, orange peel, spicy yeast and earthy hops in the finish. Medium body, quite dry. Tasty saison with a gently spicy yeast character. Nice one.

330ml bottle from Friends of Ham, Leeds. Expected a lot more from this, what with Wild Beer producing some exceptional beers of late, but this is pretty much a standard saison, refreshing but nothing to write home about.

Ahh.. it’s ’Solera’ I’ve written this down as ’Sole Ra’ must’ve thought it had some kind of Ancient Egyptian mysticism angle to it! Anyway..reddish-orange pour with an off-white head. Raspberry and forest fruit aroma. Strawberry jam, red berry and raisin flavour. Quite a sweet number. Quite nice.

Bottle from Hop Hideout, Sheffield. Hazy, amber colour. White head. Yeasty, some orange, some spice. Light toffee, too. Taste is fruity sweet, then yeasty, tangy dryness. Light bitterness to finish. Nice, refreshing, easy drinker.
