An everyday drinking beer, borne out of a Wildly different concept

An everyday drinking beer, borne out of a Wildly different concept. Using our own version of a Solera aging system (most commonly associated with Sherry, Madeira, Port and other fortified wines), we’re creating a unique blended beer.

Although this Saison has had the same love and affection found in our most sought after barrel-aged beers, it has the simplicity and drinkability of a more sessionable beer.

Blending a young crisp beer and barrel-aged beer gives a long, distinct, authentic Wild Beer Co finish. This is a rustic spicy Saison with a barrel-aged aspect, funky yeast complexity, crisp yet round grainy fullness from local spelt and a European resinous hop character.

330ml bottle. Minimally cloudy copper colour with average to huge, frothy, fairly lasting, minimally lacing, off-white head. Dry and fruity aroma, hints of red berries, fruit parings, floral yeasty overtones. Taste is dry herbal, minimally bitter hoppy, cautiously fruity, minimally chalky; relatively light body, minimally watery.

Keg at Lady Grey’s, Newcastle. Hazy amber with a thin white head. Aroma has more cherry to it than the cherry beer we had alongside it! Also has funk, lambic aromas and apples. Very complex and interesting on the nose. Taste has a lemon edge, some honey sweetness, and good sourness. Very interesting and good.

Very hazy deep amber beer with a good white head. Palate is airy and a little crisp. Light malt. Light floralness and mellow sourness. Touch of lemon and orange. Little yeast. Softish finish. Mellow and well joined up.

Bottle from Cotteridge Wines, Birmingham. Poured a murky medium amber with a thin off white head and some broken lace. The aroma is weak citrus acid sour dry spicy pepper. The flavour is medium acid sour with a medium bodied bubbly zesty palate.

Bottle from Beer Moth. It pours cloudy amber with a thick off-white head. The nose is dough, earth, wood, toast and leather. The taste is earthy, toast, spice, light tartness, some bitterness, apple and dough with a dry finish. Medium body, fine carbonation and foamy mouth-feel. Not a whole lot going on, but it is well balanced and rather drinkable.

Bottle shared at CBC Islington during the Ryan Tasting - thanks to Josh for this bottle. Pours cloudy gold with a tight, creamy head. Doughy and lightly yeasty in the nose with touches of toasted bread. Light sweet flavor with dry, doughy bread and faint bitter citrus peel. Light bodied with fine to average carbonation. Clean finish with dry bread. Simple but very drinkable.

Bottle: Nose is strong yeast, bread, slight cellar, dust. Taste, is bread, toast, malt, slight pepper and herbs in the short finish. Mouthfeel is a little thin. Looking at others reviews, I seem to have had a completely different drink. I don’t know if it was a bad bottle, but this was pretty poor stuff

Bottle from Cornelius. Murky copper body with a thin white head. Excellent lacing. Peppery aroma with faint whisky and green apple notes. Flavour of lemon, honey, yeast and white pepper. Medium body with an oily texture. Soft carbonation. A decent Saison - not the most complex, but very tasty all the same.
