Bottle at the source. Aroma is soft, white wine, mild minerals, and mild oak. Flavor has soft wine with a note of grains. Mild acid in a dry texture. Slightly tart (almost a green apple tartness) really great!

Bottle pour at the brewery, 5/21/25.
Clear brassy-gold. Small, frothy white head clumps at edges.
Soft and full of mineral with light oak and fruity hops. Low lactic, moderate Brett, great balance with lower overall acidity.
Juicy with an almost cidery character. Low oak and light corn sweetness and hints of vanilla. Supple texture still with some oomph. Light and fluffy with great balance. Super easy drinking and quite flavorful with interesting complexity created by hop, yeast and adjunct malts.

Draught @ Fermentoren, Copenhagen. Smooth, funky and floral with some farmyardy yeastiness, grapefruit, zesty citrus and earthiness. Refreshing and funky farmhouse ale.

Wine barrel aged farmhouse ale by specialist Hill Farmstead, one in a continuous series called Leaves of Grass; sample at Wild in Groningen. Snow white, irregular, breaking but generally stable head on a misty straw blonde beer with deeper golden tinge. Aroma of lavender, hand soap even, fried potatoes, lemon zest, green gooseberry, unripe banana, sourdough, Conference pear. Fruity onset, unripe melon, gooseberry and green apple impressions, minerally carb of medium strength, slick soapy and sourish wheatiness under gently drying lactic sourness, soft bready core; quite some herbality in the finish, matcha tea, thyme, lemongrass and lavender, light hoppy end bitterness with citrusy effect too, very refreshingly so. Another distinct, elegant, refined Hill Farmstead sour, very 'genuine' and original. Lovely.

Paired with sea bass, wakame, ponzu, tomato, lemongrass. Fresh, light and citrussy. Slight funk, little bit dry, but mostly real refreshing. Pairs well with the food, both nicely light and the citrus works well with the fish.
