Grisette was a wheat beer and the wheat was malted, we used up to 25-30% of both wheat and spelt, giving an OG of 10°P. Generally, Belgian hops were used. This is the only modern twist we gave to the recipe, by using Mount Hood hops (quite simular to German Hallertau and Hersbrucker), mainly for aroma. For bittering we used Hallertau Magnum, reaching a bitterness of 25 to 30 EBU. The yeast was easy, as mixed fermentation was generally used, Morpheus yeast was the one and only option.
UPDATE: Since 2018, we double dry hop Borinage and don't use the Morpheus yeast anymore for this beer.

Al 5 jaar geen Alvinne meer gekocht omdat ze altijd gushen. Toch maar weer een kans gegeven... En ja hoor. Poetsen maar. Smaak is wel oké, maar hekel aan het feit dat ze niks brouwen wat in het flesje blijft.

Very spicy and herbal. Too much clove. Interesting but difficult

Bottle, 330 ml, courtesy of Tomica. Shared with him and Max. Hazy yellow, huge white head. Bit herbal, bitterish, yeasty, sulphur. Light bodied.

Bottle. Color: Hazy yellow golden, white head. Aroma: Wild yeast, funky. Taste: Malt, grain, yeasty, wild yeast funk. Moderate to medium sweet, medium hopbitter, grassy. Medium body, below average carbonation. Over medium bitter palate at finish. Nice one.

Lot 979. Still Morpheus in this one, but it seems like it got tamed a bit, just a hint of sourness in the back. Very yeasty, good bit of bitterness. Light, lots of barnyard, a hint of citrus. A very nice and refreshing beer, with some hidden complexities.

330ml bottle from Bierhalle Deconinck. Pours golden yellow with a light mist, moderate white topping. Fresh floral bretty aroma. Light and fresh on the palate, pleasant fresh floral bretty character, light malts. Fairly straightforward refreshing grisette.
