In our search for sour-bitter combinations, we infused a beer, barrel aged for about a year,
with dried wormwood flowers from our garden. The beer itself was brewed with barley malt,
raw wheat and aged hops.

Bottled january 2020. Hazy yellow colour, white foam. Rather soft carbonation. Nose of lemon, citrus. Tart, lemony with peppery and earthy notes. Bitter dry herbal finish. Refreshing and great.

Sample at Tide's Residence, Helsinki. Color is cloudy golden with small white head. Aromas and flavours: Fruits, dryness, some musty mold, peaches, orange?... and sourness.

Sour ale made flavoured with wormwood - this can hardly be from any other brewery than Antidoot... Snow white, medium thick, mousy, opening head on a hazy straw-golden blonde beer. Aroma of lemon zest, grapefruit peel, bitter wormwood indeed, sourdough, raw potato peel, unripe plums, redcurrant, sorrel, gypsum. Crisp onset, zesty and tart, fizzily carbonated in an elegant, refreshing way; unripe green plums, green apples and light lime aspects, feeling very bright and 'crystalline'. Smooth bready maltiness underneath a drying lemony and vibrant lactic sourness with green apple- and redcurrant-like esteriness, all very elegant and nice - until the absinth-like bitterness from the wormwood leaves shows up in the end, not too soon, but with enough emphasis to overrule part of the overall sourness, feeling very herbal and quinine-like in the end, rooty and firm, yet still leaving enough room for the basic beer's tartness and esteriness to shine. I was admittedly skeptical about using bitter herbs in sour ales the first time I encountered one of these (the one with dandelion), but as with the bitterroot version, this absinth-wormwood version pulls it off, miraculously... The herbal bitterness is evident enough, yet somehow manages to fit into this beautifully balanced, elegant sour ale 'bed'. This kind of beers to me form the core of Antidoot's business - and I have no knowledge of any other brewery using bitter plants in such a rewarding way as they do. Worth the hype, as far as I'm concerned.

Clear blond to orange beer, small creamy off-white head, stable, bit adhesive. Aroma: very malty, grains, hay, cow fodder, fruity touch, bit herbal, funky, brett, lovely! MF: ok carbon, medium body. Taste: very bitter, lots of lemon peel, dry, bit metallic, more bitter, bit hoppy, herbal. Aftertaste: lots of wild brett, very funky, bit spicy, dry finish, good one.

Pours slightly unclear blonde. No real head. Smell is sharp, bit spicy. Again, as always with antidoot, very refined. Floral, full, in a way, without being heavy. Taste is full, sharp, refined, floral, malty, mild phenols, very nice. My favorite of the 3 herbal beers.

Bottle, lot 2019/01/01. Color: Slightly hazy golden, white head with nice lacing. Aroma: Malt, wild yeast funk, herbal and floral. Taste: Moderate sweet, tart sour and bitter. More (fruity and herbal) bitterness at finish. Very well balanced. Straw, wheat malt, floral notes, some wood and wild yeast funk, subtle mint and bittery herbal notes, bitter orange peel and lemon peel. Pretty smooth and dry mouthfeel. Medium body, just below average carbonation. Refreshing. Nice complexity. Very nice.

Bottle @ Foeders. Blonde. lemon and anis in the aromma and flavor. Moderately sour. Thin. Very nice.
