German-style tart wheat beer fermented in American-made oak foeders

We’re on a first-name basis with our new German-style tart wheat beer. Meet Frederick H. (The “H” stands for “Hottenroth”.) But this isn’t Fred as you knew him with Sarah. This is a Berliner Weisse with an entirely different personality. At his core, Frederick H. embodies some of the elements you’d expect in a Berliner Weisse-style beer, such as a tart flavor profile from lactobacillus, a hint of brettanomyces and traditionally low ABV. He gets a little racy though, and gains even more funky and earthy notes from house cultures and fermentation in our oak foeders at Bruery Terreux. After nature takes its course, Frederick H. emerges with a bright, refreshing body, palate-cleansing tartness and au naturel rawness. You could say the complexity of Frederick H. has reinvented our outlook on the style. In fact, he’s now a mainstay in our lineup.

Interesting, pretty big tartness here. A little ugly in the glass, brown, cloudy, some particulates, difficult to produce a head (though its plenty carbonated). It looks like cloudy old tea or apple cider. Smell features some lime juice and vinegar, somewhat vaguely earthy, like wet dirt that potentially also touches on barnyard. Flavor also has citric acid components, as well as some definitely lactic tartness. The same earthy barnyard funk finishes it out, with a mostly dry profile, leading to some lingering vinous characteristics in the finish. Maybe just a hint of oak but that is all, maybe those vinous characteristics are like a dry oak aged white wine. Also some berry like character is in there too I think. It's pretty cool, I've had more interesting and better sours, but it seems to hit all the right marks.

Vintage 750ml bottle from Master of Malt. It pours clear deep amber with a quickly dissipating white head. The aroma is musty, funky, damp oak, mouldy basement, spicy, prickly, hay, leather and a hint of overripe orchard fruits. The taste is crisp, dry, fairly sharp, kick of acidity, lemon - lime, sherbet, gooseberry, splash of white wine, then it gets all musty and funky, barnyard, spice, dirty brett, earthy, damp oak and light tannins with a dry, slightly acidic finish. Medium body, light carbonation and oily mouth feel. An interesting number for sure, plenty of flavour for the abv, but perhaps a touch too acidic? Enjoyable anyhow.

7/12/2021. Bottle sample courtesy of SHIG. California rating #100, second State to hit that milestone this month. Pours clear pale amber with minimal bubbly head. Aroma of citrus, lemon zest, grape, light funky notes. Moderate sweetness, medium tartness. Moderate body, oily watery texture, soft to flat carbonation.

Bottle from MrTipple at Hazlemere tasting. Musky aroma. Cloudy amber. Thin translucent white head. Vinous and fruity with a bitter edge. Light. Thin. Slick. Flat carbonation. Long astringent finish. Enjoyable and tart.

Bottle, split at the Hazlemere Movember and chops tasting, thanks to Tips 12/11/21. Hazed orange with a good sized just off white cap. Nose is tangy citric peel, grass, straw, lemon rind, touch of barnyard. Taste comprises tangy fruits, straw, light acidic kiss, grains. Medium bodied, fine carbonation, semi drying close with a light puckering close. Not bad.

Bottle shared in Hazlemere - cheers to Tippy. Pours mostly clear gold with a small, creamy white head. Lightly sweet, tangy citrus, lemon candies, low acidity. Light bodied with average carbonation. Tartness, citric finish. Not bad.

Bottle shared at high Wycombe tasting. Thanks to Tipple for this one. A light hazed golden yellow coloured pour with a a halo of white head. Aroma is sour a tangy apple,. Flavour is composed of TV, nutty tangy apple curd, tangy apple, salty, prixkly lemon. Prickly. Palate is semi sweet, sharp, highish carbonation, prickly. Ok.

There is not much sign of carbonation as the cap is removed. Thin and quickly fading head. Amber, opaque beer. Yeast in the rima. Flavor is moderately tart and clean, very drinkable and great that it is not flavored.
