Our Fated Farmer Series is a landmark step toward realizing our foundational vision for Trillium: Build a place that intuitively celebrates the intersection of New England farming, agriculture, brewing, and integrated community experience. The grist of each of the dynamic Fated Farmer wild ales is set on the structure of Valley Malt and is barrel fermented in 500L puncheons with our Native New England Wild Culture and aged for 5-7 months, before refermenting on freshly harvested fruit.

Bottled in March of 2019 and enjoying an extended period of bottle conditioning, Fater Farmer: Apricot presents a bright, light straw color in the glass. Pretty aromas of peach mist, apricot preserves, lemongrass, and a kiss of pineapple weave in and out across the palate. Medium-bodied and highly refreshing, this wild ale finishes with structured acidity.

Bottled March 28, 2021, drunk 8/5/21. Clear, apricot-golden with a large, white head that shows good retention. Quite tart/sour nose has a strong mix of lactic and fruit acidity. Pretty sparse on the malt, though not thin, with seemingly high attenuation. Earth, mineral, apricot pit/skin. Wouldn't hate a bit more juiciness here, but it's still nice for what it is, without any excessive acid or alcohol. Tart and fruity with soft, malty textures of light cereal/biscuit. Moderate lactic acidity with light juiciness, becoming stronger with warming. Apricot flavor really comes out after warming and breathing, as the beer also softens. Quite nice and one for another 6-12 months of aging.

Clear orange blond beer, big creamy irregular white head, unstable, non adhesive. Aroma: sourish, vinegar impression, fruity touch, a bit funky, dirty. MF ok carbon, medium body. Taste: sourish, lemony, some vinegar, yellow stone fruit, a bitter touch, earthy. Aftertaste: a bit funky, more vinegar, lemony, acidic, dry, dusty, sourish.

super nice quite sour aroma with a good base of sweet and exotic fruits. very wild ale, very fruity. flavor is quite sour, foams up in mouth, citrus fruits, funk, ABV is well hidden. very sour stuff, but very nicely fruited. There is a little bit of nailpolish, but it's well hidden. If you like crazy sour wild ale us style with yellow fruits, this might be good for you.

330ml bottle - Pours a lightly hazed golden colour with a small white head that settled to a thin white film. Some visible yeast. A tart fruity aroma, stone fruit and green apples with yeasty and light funk notes. A tart fruity taste, citric acid, tart apricot flavours with a drying sour finish.

Panda at home, thanks to Fergus, 09/07/21. Clear golden blonde with a well presented white cap. Nose is light funk, damp oak, peach flesh, green berry must, dried apricots. Taste comprises vanilla, buttery, diacetyl, popcorn ... yeah has gone fucked up in the flavour profile for sure. Medium bodied, fine carbonation, light drying close. Flush and busted ... couldn't be arsed to do the panda's worth !

Bottle at home picked up from CW online. A light haazed peach pink orange coloured pour with a lasting frothy white head. Floaty yeast. Aroma is big punchy smoked apricot, nectarine, citric acid, woody funk, some grapefruit. Flavour is composed of super bitter, puckering sour, citric acid, grapefruit, tart apricot, lemon juice. Harsh bitter. Palate is super sour, harsh, frothy prickly carbonation. Not a huge fan.

Bottle. CW online, I think. Soft haze on a pale gold. Slim ring of white. Nose has apricot yoghurt. Bit of cardboard. Some vinegar. Taste is pretty tart. Modicum of fruit sweetness. Thin on the palate with foamy carbonation. Tart finish. Not good.
