Boreas is the god of the North Wind and the harbinger of winter. As such, we've named this 9.5% Bourbon Barrel-Aged Imperial Stout after him. Conditioned in Kentucky bourbon barrels, Boreas boasts aromas of chocolate, vanilla, and baked sweets while flavours of American oak, toasted cocoa, and coffee envelop the palate.

Poured from 650mL bottle (2021 vintage). Black with small tan head. Bourbon, molasses, touch of chocolate, light vanilla, vague underlying vinous notes. Well done. Update: having this on my own and as I drink more and it warms up, I see the layers - initially started bourbon forward, then went a bit vinous, but now there's some brett coming through. Still decent, but I am lowering it a .1 in my rating for the overall as the brett is slowly taking over.

Pours a nearly foamless muddy blackish brown. The aroma has grand marnier hints, bourbon notes, chocolate liqueur, hints of chartreuse buried deep. Taste is a deep and floral chocolate, slight mint and juniper, smooth and hugely warming. Quite enjoyable, needs a fire to warm up beside.

Black. Thin medium brown head in my old school Four Winds teku. On the nose, it's got rich bourbon, sweet chocolate and ample molasses. On the palate, very rich and molassesy. The bourbon is big and bright, too, especially lending alcohol and wood highlights to the finish, and vanillins throughout. I get that sort of pecan praline character. Yeah, this is good.

Jet black brown with a rich light brown head. Dark syrupy chocolate. Dark fruit, licorice and chocolate. Bit of bitterness and thick body.

650mL bottle, pours jet black with a small light brown head. Aroma brings out lots of bourbon barrels, light vanilla, dark cocoa, some roast, and earthiness. Flavour is bold, with robust roasted malt, bourbon, vanilla, and dark cocoa. The barrels are there, it's not too hot, and there are no harsh edges here. It's not a pastry stout and shouldn't be judged as or compared to one. As a straight BA imperial stout, this is excellent.

650 ml bottle at the BCLS. Pours black with a short tan head. Aromas of chocolate nougat, sweet bourbon and slick roasted malts. Flavors of bourbon (finishing on the alcohol side), more chocolate nougat, graham cracker, and oily roasted malts. Hot for 9.5%, but quite nice.

Bottle from The Gull, North Vancouver
Black colour, large and compact tan head. Strong dark chocolate character, bold roast, the alcohol is quite evident but integrated; mild bourbon; dark bread, light cookies and cinnamon too. The alcohol is very evident in the finish Very good. Not the best one, but one of the better Imperial Stouts released this winter.

22oz shared with Alex at Andrey's. Appearance: very dark brown with a brown head. Aroma: burnt bourbon barrel, roasted malts, some red apples, some smokiness. Taste: along the same lines, relatively thin I would say, roasty aftertaste. Overall: it's ok.
