The Mistress is inspired by the strong and dark baltic porters that, for centuries, have been brewed and consumed by people around the Baltic Sea. Among them, the inhabitants of the island where our brewery is. Brewed traditionally with a mix of domesticated and wild yeast and then put to rest in freshly emptied bourbon barrels for a full four years.
Black and viscous with a small tan head. Aroma is dominated by tobacco, leather, dried fruit, smoke, and warm asphalt. Mellow carbonation and slick mouthfeel with complex flavors of dark chocolate, coffee, burned sugar and black cherries. The bourbon character is well integrated and manifests as vanilla, wood and a hint of warming alcohol. Long mouth coating aftertaste with sticky caramel sweetness and lingering roasted bitterness.

Bottled. A black beer with a lazing dark brown head. The aroma has notes of roasted malt, prunes, and alcohol. The flavor is sweet with notes of roasted malt, prunes, alcohol, vanilla, and bourbon, leading to a dry alcoholic finish.

Tasting @EurHop 2019 (Rome). Nera, densa, impenetrabile, schiuma color cappuccino media, molto persistente. Al naso note di cioccolato, vaniglia, melassa, legno, pelle, leggerissima torba. In bocca è dolce, rotonda, avvolgente, con chiusura amara a bilanciare, alcol non pervenuto. Corpo pieno, vellutata, carbonazione medio-leggera. Non perfetta al naso, ma in bocca è sublime!

ABV: 13.0%. Clear dark red brown colour with a average to large, frothy, good lacing, mostly lasting, beige head. Aroma is moderate to heavy malty, roasted, chocolate, dark malt, wood, smoke, bourbon, dark fruit, vineous, plums - raisin. Flavor is moderate to heavy sweet with a long duration, roasted, dark malt, chocolate, bourbon - vanilla, dark fruit, plums, raisin, vineous, boozy. Body is medium to full, texture is oily, carbonation is soft, finish feel is warming and light to moderate alcoholic. [20190511]
