In the seventies, a lot of heirloom apple, plum, pear varieties – typically sour and bitter with great stewing characteristics - made way for sweet fruits which were economically more interesting because easier to pick and because of a sweeter taste. Belgium has unfortunately lost a rich history and tradition of cultivating more than 200 of such heirloom varieties. Luckily, now and then, one finds some hidden gems – small places owned by amateur farmers that invest in making old varieties survive. Quince, or kweepeer in Dutch, is such a fruit. This lemon-like big pear, of which more than 50 varieties exist, is spread across Flanders. We found some 80 kilos spread over the Pajottenland for this batch.
We macerated them for six months on an oak barrel. Furthermore, we bottled it straight from the barrel. Consequently, the final fruit intensity is still 667 grams of kweepeer per litre. 100% 3 Fonteinen.

Fairly hazy orange with a ring off white head. Aroma of tart plums, barnyard and cellar funk and citrus. Flavour is moderate sweet and above moderate sour. Medium bodied with soft carbonation.

Clear rich gold with a decent white head. Nice perfumy white fruit with some light sweet basil notes. Light soured white fruit and a long finish. Fruit is pear like with a fresh herb note. Not much funk or acidity.

The second quince lambic experiment in 3 Fonteinen’s Twists of Fate series, only 134 bottles made apparently – which is still more than they made of the first version two years ago. Snow white, moussy, medium thick, opening head, misty pure ‘old gold’ robe with vague khaki tingen, deeper peach-hued and cloudy with sediment. Aroma of indeed strong raw quince and quince peel, unripe peach, green apple and apple core, dusty old wood, lemon peel, dry hay, sake, dried garden weeds. Crisp, dry, bright ‘green’ onset so to speak: green quince, green apple, green pear – the latter two also derived from the quince, of course; finely tingling carb, smooth and even somewhat creamy mouthfeel. Bready core with strong yoghurty lactic tartness and earthy lambic complexities, but that quince astringency and ‘greenness’ prevail till the end, accentuating a lemony acidity near the end as well as the dryness of the tannins from the wood – enhanced strongly by quince astringency. Meanwhile this unexpected, sake-like phenolic aspect hovers over it all. Feels a bit creamier and fuller than that glorious first version, with a less compromising dryness and astringency to it. A side by side comparison would prove useful, but unfortunately this is not possible anymore due to the first edition being long gone – and at a mere 134 bottles and after the Open Beer Days the brewery held last weekend, I imagine not too many being left of this second version either…

Taster from 0,75l bottle at Lambic O Droom. yellow clear color, no head. smells funky. citric, grassy, subtle kweepeer. very nice smell. full body, soft carbonation. tastes citric, grassy, quince, peppery, nuty, bit joghurtish. finishes dry and lightly sour with notes of kweepeer, citric and some cream notes. very nice one, not super expressive though

Bottle at OBD. Pours a hazy orange gold with medium white head. The aroma is funk, oak, plum, earth, apple. Light body, funky, citrus, plum, wood, boozy finish, very good.

Bottle. Unclear golden color with white head. Aroma is super juicy quince, very aromatic and intense, but all that I love. Taste is quince, then all the Lambic funk beneath, but the quince jam is so expressive, finishing very jammy and then also very dry and a bit mineraly. Velvety mouthfeel with just a touch of carbonation. I love quince, and this is really impressive!

Bottle, 750 ml at Lambikodroom. Shared with Miro B, Hrvoje, Gerardo, Miro and Kris. Cloudy golden orange with small white head. Lots of quince, very smooth and soft, juicy. Seems they got as much as they could out of quince. Low carbonation. Medium bodied.

Pours slightly hazed, bit darker blonde. No real head. Scent is intense, quince, dry fruityness. lovely ! Taste is full, intense quince, slightly herbal, earthy, fruity. Tad creamy/malty, even somewhat buttery. Low acidity, less great balance than the first one, which had a more pronounced tartness.
