Blended Saison + Truffles + Sage
Trøffeler is our debut collaboration with Denmark’s To Øl collective. Teaming up to make a Barrel-Age Saison made from a base of white spring Tuscany Truffles and Sage. Ithas been blended in Sauterne casks to add a sweet characteristic while still letting the yeast funk up the beer. We used foraged truffles from the Alba in Northern Italy, continuing our linage in using only the finest ingredients in our beers.
Based on our shared passion for pushing borders and using untraditional mixes of ingredients to make new and interesting takes on existing styles, this collaboration is uses a philosophy of balanced playfulness!

Bottle. Beer Central, Sheffield. Clear, straw gold. Lots of fast rising bubbles make for a dense, thick, white foam. Nose has fusty lemon. Some leaf mould. Preserved lemon. Old wood. Hint of ripe grape. I’m looking for the sage and truffle, but they’re lost on me. Taste is a little sweet, with a dryness, and a light, lemony twang. Clean and bright mouthfeel. Foamy carbonation. Touch of tang. Dry, and light sour finish.

Bottle from Hoptimism. Pale yellow golden colour with almost no head. Aroma herby sage and earth. Taste dry with sour funky hints. Light body.

Bottle from Park Fever, Hither Green. Hazy orange/gold pour with a white head. Nose of sweet spice, apricot, wheat, grains. Flavours of sage, apricot, wheat, white pepper. Good.

On tap at Lajbah, Ljubljana. Pours slightly hazy and pale straw coloured, medium sized white foamy head, ok lasting. Gentle but nice earthy aroma, mushrooms. A bit soury, cabbage-like nose. Gentle puckery sourness with hints of truffles but luckily very held back. Medium ligt body. Very drinkable.

Draught @ Mig & Ølsnedkeren. Pours clear light golden with a white head. Aroma of malt, yeast, herbs, sage, truffle. Flavor is malt, yeast, light wood, little tart green grapes, herbal, truffle. Medium body, average to lively carbonation. 061018

Mig & Ølsnedkeren, 5.5%. SLightly hazy yellow with small white head. Aroma is malt, spices, sage, yeast and herbs. Flavour is malt, spices, yeast, little sweet, herbs, little citric, lemon and a little dry.

At a tasting, small stable bubly head, hazy metalic yellow color, aroma of sage, sulphur egginess, somrthing meaty behind and a hint of spice. flavor of sage with a mellow maltiness and a hint of fruity sourness, carbonation just a touch agressive. Nice and interesting.

Hazy golden beer, dry herby aroma. Taste is an interesting blend of the sweetness of the wine with the dryness from the sage and some grassy hop. I don't know what truffles taste like so I can't pick that out. This is very drinkable .

Bottle courtesy of of Geraint and Helen, cheers you two. Consumed at home Monday 27th August 2018, we have cooked a Fish Pie for tea tonight, on day 3 of building the outdoor kitchen. Pours hazy warm gold with, in fact its not that hazy, I guess that I am so used to writing that with the amount of NEIPAs about, nope this is pretty clear. The truffle and sage have been done very subtle, meaning this has a more earthy than mushroomy character. I like this the Sauterne barrels have added a nice touch. A7 A4 T8 P4 Ov15 3.8
