Blended Saison + Truffles + Sage
Trøffeler is our debut collaboration with Denmark’s To Øl collective. Teaming up to make a Barrel-Age Saison made from a base of white spring Tuscany Truffles and Sage. Ithas been blended in Sauterne casks to add a sweet characteristic while still letting the yeast funk up the beer. We used foraged truffles from the Alba in Northern Italy, continuing our linage in using only the finest ingredients in our beers.
Based on our shared passion for pushing borders and using untraditional mixes of ingredients to make new and interesting takes on existing styles, this collaboration is uses a philosophy of balanced playfulness!

Bottle shared at BeerTemple, thanks to 77ships! Gusher. Fairly hazy golden with a white head. Aroma of herbs, sage, citrus and yeast. Flavour is light moderate sweet and bitter. Light medium bodied with light carbonation.

Bottle from Wild Beer online shop. Drunk at home. Light gold, clear with a large loose white head. Lots of visible carbonation. Light herbal aroma with notes of lime and candy sugar. A savoury note to the taste with the bitter/sour flavour of kumquat peel. Very heavy carbonation. Pretty good in its own way.

Taster from tap at Lajbah, Ljubljana. Hazy golden, small off-white head. Distinct spicy and fruity aroma. Lemon or orange peel, coriander, herbal spice underneath, very light truffle presence which is fortunate, we don't want that spice to escalate. Citrusy. Estery. Wouldn't say the barrel is present in aroma, but a lot of yeast character signifies it's been aging. Piquant spicy yeast in the flavour, dusty, fruity. Light bitterness, moderate to high carbonation, medium body. Phenols a bit too light. Maybe some wood in flavour. Dry finish.

Bottle. Pours straw colour with intense head at first, no long retention though. Aroma is quite vinous with the white wine being quite noticeable. Otherwise funky and refreshing, some lemon and generally a bit fruity, maybe apple and pear. Medium body. Flavour is light in maltiness and refreshing, with a lot of sage. Again apples and a bit of citrus fruit, tart with a nice funkiness. Truffle is only noticeable in the finish - tbh I'm not sure they were really necessary, as they are very subdued. A bit of wood and earthiness also in the finish. Overall a very nice saison, a pity the truffles didn't really shine more.

Keg at Beer Merchants Tap - Hackney Wick. Pours clear gold, effervescent, with a tight, creamy white head. Has a nice lemony acidity, some citrus juice, salt, soft herbal notes. Light to medium bodied with fine, massaging carbonation. Tart and clean on the finish, with mild quenching acidity, some wheat, lemon. Very nice.

Keg at the beer merchants tap. A mostly clear bright yellow straw coloured pour with a a lasting fine white head. Aroma is nice classic saison yeast, light zippy, straw,. Flavour is composed od sharp lemon rind, crisp light grains, lime, rustic light grains, sharp lemon. Palate is crisp and sharp, frothy airy carbonation. Good.

Collaboration of Wild Beer Company with Danish To Øl, a farmhouse ale made with Italian truffles - a first for me in beer - and sage, and aged on Sauterne barrels. Sounds like a fascinating combination, playful indeed as the brewery puts it... Bottle from Gedeelde Vreugde. Light gusher, but manageable. Initially thick, pale yellowish egg-white, creamy head, slowly thinning but very well-retaining and remaining closed for a long time, over a misty ochre-ish straw blonde beer with vague khaki tinge; shifts to a cloudy, more ochre-ish greenish-blonde with sediment, with some 'dots' of proteins here and there. Pleasantly versatile bouquet, with a keen 'fleshy' and raw mushroom-like note at first, not explicitly truffle-like though it does doubtlessly reflect this delicate and precious ingredient; it plays frolicly with impressions of fermenting white grapes, clear but not obnoxious dried sage, sourdough, green apple, yellow plum, dry white wine, dry moss, old lemon rind, yoghurt, moist wood but not overly woody, forest floor, green tea, stale grapefruit juice, old sweat, brown soap, industrial white bread slices, withering woodsorrel leaves and a background whiff of less pleasant stale urine. Crisp, estery onset, lots of fruit tartness but no 'burning' acidity, soft sour apples, unripe green grapes, yellow plums and Conference pear, in all more sour than sweet, lively but 'refined' carbonation, slender, lean body with pronounced and unmistakable wheat slickness and (basic) sourishness. Light bready 'soil', soggy white bread with a grainy edge, under ongoing crisp and tart fruitiness, dryish, leading to a more aromatic finish with zesty notes and a very herbal character (the sage). The truffle again remains limited to a vague raw mushroom-like aspect, while the tartness increases a bit in the end due to the wine barrel treatment - though the Sauterne aspect too remains fairly limited compared to what I was expecting. Tannic effects are however clear enough, with dry, rusty effect matching well with the 'green' herbal character added by the sage; dusty-bready yeastiness rests on the root of the tongue after swallowing, with a vague meaty character to it which I suspect needs to be ascribed to the truffle, while this sage aroma elegantly lingers retronasally. An earthy, slim and slender modern Anglo-Saxon style saison with a light grapey and much stronger herb twist to it, but the truffle remains very understated - understandably perhaps, considering the price of these subterranean fungi. Too bad, I was actually looking forward to its presence. Still, a playful 'forest beer' indeed, though Wild Beer Co has made a more lasting impression on me with many of their other creations. More accessible and less exotic than expected, but refreshing and aromatic enough.

On keg at the Hanging Bat. Appearance - pale golden with a slight haze. Thin head. Nose - savoury and herbaceous on top of the usual lemon and spice that the saison yeast provides. Taste - pineapple and a touch of the sage again. Not sure I get the truffles though I did on the nose Palate - close to medium bodied with a tangy middle and finish. Decent linger. Overall - good.
