Taking inspiration from the Japanese word 'Kodawari', which means the relentless pursuit of perfection, we embarked on a journey to conceptualise, brew and refine the perfect DDH Pale Ale. Still on this journey, this series seeks to explore the best features of a modern pale ale – vibrant hops, soft malts and a juicy, full-bodied drinking experience.

(Can) Cloudy golden colour with big, frothy, off-white head. Fruity, hoppy nose with tropical fruit, mango, papaya, herbs and white bread. Malty, hoppy taste with notes of white bread, mango, herbs, papaya and a mild citric/herbal bitterness in the finish. Medium body, with a certain sweetness. Hoppy and refreshing, with a soft malt character and a fresh hop presence. Very nice.

Keg tap at the Wolf, Birmingham. Light, light yellow, straw really. Hazy with a film of white head. Pineapple, white grapefruit, some mango and vanilla in the aroma. Sweet taste with sugared white grapefruit, lemon zest, white grape. The lightest touch of bitterness in the finish with melon and banana in the aftertaste. Full body for the ABV but carbonation is toned down a little bit. Grand.
