Bottle. Aroma is rather floral and herbal with notes of rosemary, oregano, sage? Some yeasty notes. Very floral and spiced/herbal. Lighly tartish with a mild sweetness. Body is medium. A bit too herbal for my taste but certainly rustic and interesting.

750mL bottle, with cork code 086/477044 and Lot 28. Drunk 5/29/24. Clear copper-bronze. Small, densely-creamy, off-white head. Nose is beautiful saison yeast with plentiful white and black pepper, earth and cellar-like mustiness. Quinine adds brightness and balance to the extra malty base that shows rich honey and even a hint of graham cracker and light caramel. Clean with low cardamom (barely know it's there) and just a touch of juicy, lightly acidic fruit juice. In the mouth it's malty and soft with creamy, tight, engaging carbonation and reasonable attenuation. The adjuncts help balance and there's plentiful classic saison character here. By the very end of the bottle, the quinine builds up a bit much and provides quite a bit of bitterness, but the extra maltiness balances the adjuncts nicely.

It pours a hazy orange with a massive head of foam, long lasting and plenty of lacing.

The smell is fruity..pear yeasty, peppery, spicy, some band aid aroma, funky.

The taste is pears, white pepper, spicy, bitter, has some Brett, yeasty and dry as a bone. Oh and a bit of light tartness.

Medium bodied, lots of carbonation, I am enjoying this.

Bottle, 750 ml, shared with Miro B. Hazy orange with large white head. Fruity, hoppy, brett, herbal, nice bitterness in finish, some yeast.

Bottle from Premier Gourmet in Amherst. Pours golden with a thick, thick layer of head. So the wait for it to settle out a bit begins... and wait... Spicy with a complex blend of flavours. That cardamom and quinine bitter, over a sweet hay malt, with a touch of citrus. Unique flavour. Excellent.

(Bottle, 0.75 l, thanks VastActiv, at Arde, 20221021) The beer poured golden and hazy. Its head was huge and white. Aroma had nutmeg, dried orange and spiciness. Palate was medium bodied with medium carbonation. Flavours were sourness, nutmeg, floralness, sweetness, floralness, black pepper and bitterness. Aftertaste was fruity, spicy and bitter. A weird and spicy brew.
