Blend of 1, 2, and 3 year old Danish Wild Ales with fresh Stevnsbær cherries from @frederiksdalcherrywine.
For the 2020 vintage, we had the honor of visiting the famous cherry winery and orchard and harvesting our own cherries. We also got to visit and talk with owner Harald, and winemaker Jonas, and pick their brain a bit. After a day full of tasting and learning about cherry wine production, we headed home with a brain full of knowledge and ideas on how to improve our beloved cherry beer.
The result was a shorter maceration than previous vintages, with twice daily pump-overs to maximize skin exposure and keep the temperature of the maceration homogenous.
We are ecstatic with the results, and we know you will be too!
Aged for 12-36 months.

Bottle shared in London - cheers to Dan: pours blood-red with a slight, creamy pink head. Pretty sharp and really salty, oddly bitter cherry peel. Medium bodied with fine to average carbonation. Sharp finish, berries, odd salty bitterness. So so.

Level 6 tasting. Cheers! Hazy deep purple beer, small pale magenta head. Smooth palate, dry with good fine minerally carbonation on the back end. Super rich berries, blackberry and blackcurrant and some red berries. Crisp finish, some acid coming through. Nicely intense but a little acid.

Bottle shared at the sweltering Columbus tasting. 13/07/2022. Many thanks to Daniel osprey. A thick deep puple red colourd pour with a loose purple head. Aroma is saly earthy plum, cherry, funky, horse. Flavour is composed of semi sweet, piney hop, cherry, cough syrup, salt, cherry cola. Nice fruit character. Palate is semi sweet, tangy, highish carbonation.

Nose is tarte cherries, funk, grains, herb, straw.
Taste comprises sharp cherries, cherry stones, barnyard bite, mellow acidic rise, hay bale, hedgerow, funk.
Medium bodied, fine carbonation, semi drying close with a balanced puckering rise.
Tidy.

Draft at Baghaven. Poured a murky dark red colour with a round bubbly pink head. The aroma is red berry fruits. The flavour is moderate to light a sour, with a light, crisp, tart fruit, light fruity boiled sweet palate, funky yeast palate. Medium bodied with average carbonation.

375mL bottle, pours a deep dark mahogany with a small pink head. Aroma is wonderfully complex and deep, with lots of deep pitted cherries, complex funk, and a little oak. Flavour is deep and complex, with intense pitted dark red cherries, moderate acidity, light acetone, plenty of funk, and oak. So much pitted dark red cherry depth, with a great oaky and buggy character. Excellent.
