Our Baumburger Klosterdunkel is brewed according to an old recipe with 12.9% original wort. According to the old tradition, only dark malt is used to brew our dark. It is not additionally colored or changed. An elaborate two-mixing process is used. As before, this beer is not filtered. The cooling (removal of the turbid substances) is achieved only by cooling and storing. That is why we also list the yeast in the list of ingredients, even though the beer has been clarified to such an extent that the yeast can no longer be seen with the naked eye. Thanks to this complex brewing process, we have succeeded in producing a real beer specialty based on traditional recipes.

Unclear chestnut brown reddish with no head. Candy sugar, roasted malt, roasted nuts, raisins, dark bread, some lemon zest. Malty caramely sweetness, some dry bitterness. Medium bodied, oily texture, soft carbonated, dry malty bready nutty sweet finish. A very well balanced Dunkel and rather full bodied and tasteful

Baumburger Klosterdunkel, Fläschchen aus dem Brauereiverkauf. - Rotbraun, fast klar. - In der Nase feines brotig-toastiges und dunkles Malz, Karamelsüße, zarte fruchtige Säure und blasse hopfenwürzige Hopfung. - Antrunk kernig toastig-dunkelmalzig mit schöner dunkler Schokolade, Melanoidinen, Karamel und feiner Bonbonsüße, aufgelockert durch zarte bitterfruchtige Noten und milde herbale Hopfung. Milder rezent, vollmundig, weich. Noch im Abgang dominiert die sirupartig tiefe dunkle Malzigkeit; die Hopfung fällt etwas knapp aus. - Aromatisches, charakterstarkes Dunkles, das nur etwas stärker gehopft sein müßte. Zu dem gediegenen Eindruck trägt auch das altmodische Etikett in Sütterlinschrift bei. (4.6.2024.)

Bottle picked up from Sulzberger Bierhaus Pfaffenhofen an der Ilm, consumed at home, Thursday 30th March 2023 listening to Steve Lamaqs Round Table and cooking Stifado. Pours clear, actually it's not quite clear, there is a little haze, off white head. Taste is a little toffee, chewy malty sweetness, super soft mouthfeel, a light bitterness. Good.

Bottle. Best until 9/12. Brown color. caramel, orange and a hint of butter in the aroma. Caramelly sweetish flavor with hints of milk chocolate and orange. Well balanced, well matured brew.

Re-rate from Holzfass at Ettaler Holzfass festival: 7 4 8 3 13 Cloudy brown big golden foam. Medium light body, a bit pitch, light bread and roast, amber retronasal. Old rating: 5 3 6 3 11 Bottle. Farty catty roasted sugar. Red amber, low head. Dusty cheesy, caramel/melanoidin, sticky sweet, rural notes, earthy, old herbal hop finish. Got to try a fresh sample. Medium light, flat body.

Bottle. Clear ruby-amber color with off-white head. Aroma is very sugary, a touch farty, some off fruit flavours. Taste is the same. Sirupy mouthfeel with low carbonation. Not for me. 4-3-5-3-8.A freshly gepichtes Holzfass at the Ettaler Holzfass-Festival. Hazy amber color with beige head. Aroma is earthy, nutty, wet wood. Taste is the same, quite herbal in the back. Silky mouthfeel with natural carbonation. Not outstanding, but just a perfectly fine Holzfass Dunkles - quite amazing how much better it is than the bottle I remember...

(bottle, 33cl) Hazy, chestnut-brown colour with a beige medium-sized frothy head. Toasted malty aroma with notes of bread, caramel, chocolate and a whiff of burnt wood. Moderately sweet and cautious bitter flavour, rather light bodied with a tame carbonation. Toasted malt character with caramel, bready accents, as well as lighter hints of dark chocolate; moderately sweet and mildly bitter finish with present notes of caramel. 10.X.16

Ein tolles röstmalzig-schokoladiges Bier. Recht trocken im Antrunk, Röstmalz, Kaffee, dunkle Schokolade. Verbrannter Zucker, ohne zu süß zu wirken. Der Nachgeschmack ist intensiv röstig-dunkel, angenehm süß-herb. sehr süffig und doch tief! Tolles Bier!
