Raphael Mettler became acquainted with these two breweries at „The Festival“ in Portland, Massachusetts. As we work in similar product ranges, we found many things to be enthusiastic about. And so a joint beer brewing project was born, the idea being to brew a beer based on an identical recipe but brewed in three different places. In October 2013, we made the first brew in Austin, Texas, the second one in April in Denver, Colorado and finally the third one at the Brasserie Trois Dames on the 6th of May 2014. Each brewery was provided with vino fino barrels from Jerez de la Frontera which were practically 70 to 80 years old. The vino fino is a wine fermented « sur lie », characteristically oxydized. We wanted to replicate this profile. The beer will age for 6 to 12 months. At the Brasserie Trois Dames we used a seasonal-type yeast for the main fermentation and we added active lactobacillis yeast for barrel fermentation. This yeast comes from the Fromagerie Tyrode in L’Auberson. We also added a Lambic beer base from Oud Beersel. The Swiss version of the beer is due to come out in the spring of 2015.

Bottle at bar hop 2. From the bottle i got and previous ratings, im going to assume this batch of this beer is infected or something. The other two versions of this beer via crooked stave and jester king are getting rave ratings. Murky brown pour, with a tiny, cask looking beige head, not a good start. Aroma is funky, with big vinegar notes with some metal, and wet, soggy cardboard. There is some fruit in there but its incredibly musty. The body is ok, but thr carb is basically flat. The finish is super sour, actually like vinegar with a very off putting super earthy, almost dirt like finish. What the hell happened to this beer?

(Bottle) Amber colour with brief, foamy, off-white head. Fruity, tart nose with notes of apple juice, dry sherry, wood, vinegar and sour grapes. Fruity, tart taste with apples, sour grapes, grapefruit, oak wood, dry sherry, barnyard and a dry and tart finish. Medium body, dry. Interesting, quite tart and really tasty. Very nice.

Draft. A hazy yellow beer with a lazing yellowish head. The aroma has notes of fruits, malt, and caramel. The flavor is sweet with notes of malt, caramel, fruit, and spices, leading to a tart finish.

Nice slightly fizzy mediumlasting head. Aroma is slightly sweet grainy, wet grain, sugar, caramel, grass, oak, sorrel, hints of butterscotch. Taste is slightly dry grainy, oak, wet grain, grass, heather, sorrel, sugar, caramel, mild vinegar, wet rope, hints of butterscotch. Medium bitterness, slightly dry mouthfeel. Fair enough.

Cloudy amber color. Fruity sour aroma, a bit flowery; cloudberries come to mind, hint of passion fruit and yuzu. The carbonation is very low, I start thinking it would have been better with more; moderately sour, and not as much going on as the aroma.
Good, but a bit disappointing after the great aroma.

750ml bottle at Brian’s office. Pours a murky golden with almost no head. Aroma is fruity, tart, barrel notes. Taste is similar with pleasant barrel notes. Low carbonated. Quite pleasant.

Muddy pale brown. No head. On the palate, some light sourness, a sort of funky complexity, but quite yeasty. This is interesting, but not great. There’s a hint of that sherry character but what ends up happening is that none of these characteristics really ever make an impression.

Bottle from Berkeley Bowl West. Pours clear copper with a few bubbles. Aroma is sort of berry/lactic/sour. Med minus body. Flavor is berry/lactic/sour, tho the sour is rather mild compared to a BFM. Quite drinkable. Seems a bit wood astringent in the finish. More than a bit! There is an oxidized flavor that comes through with a little time.

Sample at Crooked Stave. Hazy orange color with a medium off-white head that dissipates steadily. Short strings of lacing. Aroma of funky fruit, yeast and biscuit malt. Light to medium body with flavors of tart fruit, herbal yeast and doughy malt. The finish is mildly sour with a fruity yeast aftertaste. Decent overall.
