The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement.
So, BUFF didn't really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF was first brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010. The brewers have a repeat performance planned for 2012!
Saison du BUFF is a 6.8% ABV Saison brewed with parsley, sage, rosemary and thyme. The beer is brewed three times, once at each brewery using the same recipe. The expected release dates for each brew are as follows:

Clear golden pour.
Spicy aroma, quite herbal with a nice pepery saison like aroma. Flavor is loaded with herbs, and a big earthiness from the rosemary and sage. Finish is freash, and bright, light grassy notes, some slight tartness, and a great herbal note.
Good, great even. Really good flavors, sage rosemary and thyme, just like that song lyric.

Notes from January 2011 Growler filled at New Beer. Pretty cheaply too I might add. Smoke wafts from the growler. Two inches of pop-marked eggshell head inside my Ommegang anniversary glass. Rocky, with a fair amount of lace. Body is a chill hazed pale gold color. At first sniff, plenty of rosemary, but lacking in sage to me. (Or maybe I'm just all sage-d out from the holidays). Woody, but not quite thyme. No parsley either. Would love to try a straight parsley beer, as that stuff is too subtle mixed in with everything else. Wheat?... no wheat, who knows. Bit of grapefruit, margarine, & more bitter herbage on the tail end of the scent. Taste isn't as astonishing, but still delivers. Dry grain, twig & stem herbage, some lemon rind, wintergreen mint, plenty yeasty. Honey--ish as it warms. Obviously it's going to be a bit medicinal, but it's a nice blend. Parsley actually comes through here if you put on your beer snob cap & clench your lips three times. Carbonation is appropriate, but the alcohol is a bit of an guesstimate I feel, like DFH has been known for in the past. Not super dry, but the finish of grainy malt & bitter herbs really pushed me to keep drinking. Numbingly yummy. :)

Bottle. Bottle was a gusher. Pours a cloudy amber with a smallish white head. The aroma was grass, herbs and a bit of fruit pith. The taste mirrored the aroma, grassy, herbal and some bitter lemon pith. The palate medium in viscosity with lively carbonation. Finishes short and semi-sweet. Overall: Ok brew, nothing to fault, but lacking in distinction.

The Aromas are robustly volatile with herbs, spices, caramel malt and a bit tart. Flavors are similar to nose though not as deep or complex. Very nicely balanced with perfect carbonation. Great body and finish. Nice beer.

12oz bottle side by side with the Victory version pours out straw color topped with a white head. Nose is more spice then the Victory version plenty herbal notes some citrus aswell. Taste is more of the nice spice herbs earthy notes and citrus.

Bottle from Red Spirits & Wine. Pours a deep gold with a fluffy finger of head that lingers. Herbal nose, with pear and apple notes, a touch of floral aromas as well. Pink peppercorn, dried pear and more herbal grass. Lingering pear sweetness with a peppercorn. Draught. Clear pale yellow with very small frothy white head, faint spicy aroma (sage), medium carbonation, malty taste with vanilla and sage, smooth body, medium malty finish. Nicely spicy saison.

Shared 12 oz. bottle. Clear straw, white head. Intense herbal aroma. Taste has very concentrated herbal flavors, with rosemary, thyme, sage and even parsley noticeable. There are some faint saison characteristics getting through, but the herb flavors are incredibly overpowering, and not necessarily in a good way.

12 ounce bottle. Bright yellow gold color. Small foamy white head. Big herbal nose. First sip has light grainy malt and herbs. Notes of rosemary, sage and thyme (in that order). Sorry parsley, didn’t pick you up. This is very refreshing and drinkable. Just the right amount of herbal influence creates a uniquely flavored Saison. Some tart yeastiness in finish provides a hint of funk. A nice effort from the BUFF boys!
