“MIZU-KOJI”, is a barleywine/amazake blend. The Amazake has undergo a spontaneous lacto-fermentation. After the fermentation we blended with the barleywine during his second fermentation. The bacteria of the Amazake and koji breaks down complex sugars.

At the end of fermentation we dry hopped and infused white jasmin flowers.

All the base notes of a Barley Wine with lots of malt and honey sweetness. Later some gentle sweet esters of over ripe orchard fruit. Dry finish with tannins and wood. Unique!

Bottle. Color: Clear orangish golden to orange amber, no head, Aroma: Malty, caramel, dried yellow fruit, sweetish. Taste: Sake, subtle dried yellow and dark fruit, bit boozy, umami, caramel notes, a bit oxidized. Sweetish start and dry bittery finish. Hard to descibe properly. Over medium body, no carbonation. Another surprising experiment from this brewery. Glad to have the chance to taste this beer. Interesting.

No head to speak of; clear cognac-coloured beer. Nose of sherry or sake, alcoholic alternative wines or beverages. Sweet sherry, rosewater, sake - and not the best quality - also sweet. Old pistacchio nougat. No carbonation, as mentionned; quite sticky. Flavours fall away a bit once tasted. Very interesting - mix of a non-alcoholic beverage with a strong beer. Unfortunately, not my cup of tea, sorry, sake at all. Txs to Stef!

13/XII/22 - 37.5cl bottle @ Commotie (Gent), BB: n/a (2022-1740)

Pretty cloudy orange blond beer, practically no head. Aroma: very yeasty, lots of (overripe) banana, sweet impression. MF: soft to no carbon, medium body. Taste: pretty sugary start, overripe banana, pretty funky, weird touch, very harsh bitterness. Aftertaste: caramel malts, pretty sweet, unpleasant bitterness, funky, ripe banana, bubble gum. Not a big fan.

Bottle at tasting. Clear at first but then a bit hazy after pouring in the second part of the bottle. Virtually no head. Aroma is odd...umami...soy sauce...salty perhaps? Reminds me of some kind of cleaning agent as well. Flavor is even weirder: sweet and salty combined. Don't get it. Really weird. Not my kind of beer for sure. Is it even beet?

Pours unclear yellow. Scent is mild, citric, fresh. Taste is full, fairly thick, umami. Salty. Noticable alcohol, but nowhere near what it is ( the brewer told me 16, but their site sais 14 ABV. à bright, citric, so strange and unique ! Mildly floral.
