Hazy golden colour. Medium carbonation. Fruity nose, banana, estery. Taste is sweet: honey, peach, a bit citrussy. Well balanced and nice tripel

As Trinité Triple at 8.5 % ABV. Appearance: Cloudy gold with a tall off-white frothy head of high retention. Aroma: Solid pale malt, esters, fruity yeast, slight funk, distant medicine. Taste: Light sweet, dry ending. Malt, overripe fruits, slight funk, apple seeds, grass. light ending bitterness. Mouth feel: Medium body, average to lively carbonation. Summary: An interesting one. Not my favourite one I'm afraid.

Bottle at home. Clear golden color, medium sized white to off-white head. Aroma and flavor are malts, lightly herbal notes, sweetish a bit. Can't get more tbh. Meh.

Commissioned Montoise tripel with sober and very old-fashioned label, brewed at Binchoise. Medium thick, egg-white, densely creamy, regular and stable head over a misty straw blonde beer with pale yellow hue, containing a 'soup' of translucent yeast dots, shifting to an equal, more ochre-ish cloudiness with sediment. Aroma of very strong isoamylacetate (banana ester), reminiscent of banana milkshake and banana-flavoured bubblegum, next to hints of powder sugar, candy apple, freshly baked sweetbread, ripe pear, canned pineapple slices, industrial honey, hints of lemon curd, margarine, coriander, baking soda, camomile, white pepper, brown banana peel, withering cut flowers, wodka, wood sorrel leaves, potato mash and, alas, a whiff of DMS, initially hidden in the background but more pronounced as it warms up, halting my enjoyment. Spritzy onset, sharply carbonated with souring and numbing effects but still very strong in the bubblegum-banana ester factor adding sweetness, next to additional estery hints of ripe pear, pineapple and yellow plum as well as green apple acetaldehyde; the overcarbonation coarsens an otherwise smooth, fluffy mouthfeel established by bready malt sweetness (white bread dough) with white candi syrup sweetishness on top. Growing spiciness in the finish, phenolic (cloves) but coriandered and a bit soapy as well, before a deeply situated, earthy, floral hop bitterish touch appears; spiciness is enhanced by a peppery, warming but not overly wry, wodka-like alcohol effect. Bready and banana estery sweetness linger along with this peppery effect. Your classic Belgian sweet tripel, as classic as it gets really, with a truckload of banana ester and some unnecessary but to me non-offensive acetaldehyde; alcohol is palpable and balances on the edge of astringency, so could probably have been hidden a bit better. Too bad for the DMS as well, I passionately hate it - and it seems to pop up in one out of every three Belgian ales I taste. How is it possible that all these brewers do not notice it themselves?

Pours clear blonde. very unstable, small to medium sized white head fades instantly. Smell is malty, some DMS notes. very grainy. mild earthy, spiced hoppy touch. some banana, cloves ( peppery ) more in the background. Taste is sharp, malty, very grainy, bit unfresh-like maltyness thouch ( not problematic yet ) Mild DMS notes. Bit spicy hoppyness. ends rather dry ( dry is the overall impression of the beers, tho some Sugar notes can be perceived, the beer isn't really sweet ) medium esthers and phenols for the style. Carbonation is to the high side ( as is correct in style ) . OK.

Taste medium sweet and bitter, fruity, spicy, coriander, yeast. Bittersweet finish, fruity touch, bit dusty, spicy medium body, oily texture, average carbonation.
