Bonnie Stillwatter is a conceptual collaboration of artistry & friendship. Indie folk-punk legend, Will Oldham (aka Bonnie 'Prince' Billy), experimental music ensemble, Watter, and postmodern beer designers, Stillwater Artisanal, assembled in Louisville. The collective then set out to create a unique sensory experience built on existential philosophy and the love of craftsmanship.

Bottle. Pours a clear gold with a copper hue and a white head that dissipates nearly completely. Aroma has a strong sour lemon note with a light smokiness and a bit of yogurt. Flavor has a light smoke and grain up front with a strong sour lemon note and a hint of yogurt underlying.

Bottle. Pours clear blonde, small white head. Smell is fruity, bit sweet even, mild sourness, some salty aspects. Taste is very dry, fruity, some lemon, and even some orange. Don’t really get the smokyness I was afraid for. mild sourness. lactic sourness. Too dry , perhaps, but manageable. yet a whome bottle is too much.

Bottle: Pours clear, bubbly gold with a short white head. Smoky, salted red apple-peel aroma. Taste is nicely salty...apple, wood smoke....tart.....more apple-peel. Really nice...great body, wonderful flavour.

Bottle. Lactic, lightly smoky lemon malt and straw aroma. Hazy medium yellow with small head. Sweet-tart lactic lemon, smoked meat malt, and hay flavor - excellent. Excellent balance. "It’s like there’s a party in my mouth and everybody’s invited".

Refrigerated brown bomber poured into a weizen glass. Slightly hazy golden with small white head. Aroma is salty tart, medium/light body, lively medium carbonation, and little lacing. Taste is tart peach, salty, and some smoke. Expected to like this more.

Bottle. Pours quite hazy golden, small white head, dissipates fairly quickly, good lacing. Aroma is light hardwood smoke, wheat, lemon, dust. Flavor is light plus tart, lightly smoky, nice hardwood grilling smoke, lemons. Light body. Interesting, for sure.

22 ounce bottle into tulip glass; no bottle dating, but is a recent release. Pours lightly hazy bright golden yellow color with a 1-2 finger foamy white head with decent retention, that reduces to a thin ring of lace. Minimal lacing on the glass, with a fair amount of streaming carbonation. Aromas of big tart lemon, lime, green apple, pear, white grape, coriander, sea salt, pepper, wheat, cracker, light wood smoke, light white wine vinegar, grass, and herbal/yeast earthiness. Damn nice aromas with good balance and complexity of fruity/acidic yeast, pale malt, and earthy hop/spice flavors; with good strength. Taste of big tart lemon, lime, green apple, pear, white grape, coriander, sea salt, pepper, wheat, cracker, light wood smoke, light white wine vinegar, grass, and herbal/yeast earthiness. Fair amount of fruity/acidic tartness and earthy spiciness on the finish; with lingering notes of lemon, lime, green apple, pear, white grape, coriander, sea salt, pepper, wheat, cracker, light smoke, light white wine vinegar, and herbal/yeast earthiness on the finish for a while. Damn nice complexity, robustness, and balance of fruity/acidic yeast, pale malt, and earthy hop/spice flavors; with a great malt/tartness/spiciness balance and zero cloying flavors after the finish. Medium carbonation and light-medium bodied; with a very smooth, crisp, and moderately acidic mouthfeel that is great. Alcohol is very well hidden with minimal warmth lingering after the finish. Overall this is an excellent grodziskie style. All around great complexity, robustness, and balance of fruity/acidic yeast, pale malt, and earthy hop/spice flavors; and very smooth and crisp to drink with the balanced acidity. A very enjoyable offering.

Draft. Slightly hazy golden color, medium white head. Aroma of light citrus, grapefruit with a touch of burnt embers. Taste is herbal on a background of subtle smoke. Very tasty.

Bottle. Slightly cloudy, a touch of lactic tartness on the nose, a bit smoky, citrusy. Very fresh, bright, fruity and sour. Clean and full of flavour. Delicious.
