Big, black, and beautiful. La Negra is an oak-aged Russian Imperial Stout, brewed with our British Pale malt, and an enormous amount of roasted malts. A 5 hour boil lends a big burnt sugar and raisin character while the intense bitterness gives the beer an incredible dark chocolate finish. Needless to say, the mouthfeel is what you would expect from one of the biggest beers we’ve brewed.

Bottle from Stefan: pours black with almost no head. No idea how olde this is. Aroma is barrel, anise, dark chocolate, vanilla. Taste is somewhat sweet, lightly boozy, some bitterness. Nice aftertaste.

Undated bomber shared by Jow on 8/28/25.
Clear, dark. Tan bubbles immediately to thin ring.
Big oaky notes next to fudge, mild licorice and moderate but not overdone roast. No alcohol, no excess sugar. Tobacco, molasses, nice and intense.
Now this is a RIS that I can get behind. Roast and hop are certainly present, but tempered. Body is chewier and thicker than traditional. Tons of fun complexity with more molasses and tobacco. Great depth and attenuation. No alcohol noted.

bomber bottle. pours an opaque black color with a small khaki colored head that soon dissipates t a fine ring. T he aroma is strong with whiskey barrel, anise and chocolates. Taste, like the aroma, has whiskey barrel in the forefront; followed by licorice, baking chocolates and bitter walnuts. The palate is full and viscous with soft carbonation. Finishes long and semi-sweet with lingering bitter black licorice. Overall: decent RIS--paired superbly with some English cheddar.

Rich, black, just a thin head. Lots of liquorice, molasses on the nose. Super rich, powerful burnt sugars, lots of bitterness, robust bourbon in the finish, too. Excellent.

I have a 22 oz bottle of La Negra that was bought at Susan's Fine Wines in Santa Fe last year. La Cumbre, easily my favorite NM brewery, offers up an imperial stout, I'm on top of it. Tonight's glass, a tulip from Cowtown, is in place. The pour is a solidly black liquid and no head that I can see. And the scent is attractive with dark plums and chocolate. The taste, geez, is really good. Black raisins, dark chocolate, the barest hint of roast, caramel, malt, bourbon I assume, black bread and jam. Some decent sweetness offset by a nice finishing bitterness. La Cumbre, well done again.
