Originally a blend of Kapittel Pater and Kapittel Prior, now an original recipe.

In our brewing process for the 7,5° dubbel we use extra winter malt .
This increase in malt results in a higher alcohol content, so the yeast that feeds on the sugars in the malt is given a feast of greater proportions.
By adding sugar, also known as “Belgian candy,” we can increase the activity of the yeast, and the beer gets a second fermentation in the bottle, carbonating the beer in a natural way.
This gives the beer a beautiful and large froth.
This fine Dubbel has a rich malt aroma of malt, yeast, dark fruit, & spice; flavors of sweet malt, yeast, caramel, dark fruit, raisons, and spice, with a faint touch of pleasant bitterness, and it fills up the gap between our 6° Pater and the 9° Prior

Ambar, algo rojiza, muy cremosa de aspecto y con un par de dedos de espuma ligeramente beige. Aroma de dulce cereal y azucar tostada. Agradable textura y buen cuerpo. En boca menos dulce de lo que anticipaba. Mezcla de especias, malta tostada, dulce caramelo. Final entre dulce y amargo. Buena dubbel.

Bottle from Dranken Geers, Oostakker, Nr Gent, Belgie, consumed at home B/H Monday 4th May 2015 Pours murky brown with an off-white head, candi sugar in mouth, but with a burnt edge. One of those beers that I’ve had plenty of times but never got around to rating. In fact I think that we’ve even had it at the Tap at Watou when cycling in the area a good few years ago now. Crap rating but just to say I like it. A6 A4 T7 P4 Ov13 3.4

330ml bottle from Beers of Europe. Pours clear copper brown, 2 inch off-white head. Aromas are metallic, fruit and nut, demerara sugar. Taste is sweet, light spice note. Dry finish, prickly carbonation.

Bottle, 10C. Brown with a beige head. Aroma of dark fruit and bread, some brown sugar and banana. Medium bodied, moderate carbonation. Fairly rich and sweet with lots of dried fruit, a hint of roast and spices (mainly coriander) in a dryish and slightly bitter finish that lifts the sweetness away nicely. No great magic but very harmonious.

Pours clear brown with an amber glow, small white head . Smell is rather weak , very ( banana ) Fruity forward ( yeast notes ) . Taste is mildly bitter, with a sweet undertone ( caramelly dark malts ) , banana-fruity flavors . Perfect carbo , very nice mouthfeel . Nice

The dubbel in this series, light beige head and dark burgundy colour. Malty with some candi sugar, candied fruits, dryish with a lightly bitter, hoppy finish. Stereotypical dubbel, lacking a bit in character compared to its lighter coloured namesakes.
