Originally a blend of Kapittel Pater and Kapittel Prior, now an original recipe.
From the brewery's website:
In our brewing process for the 7,5° dubbel we use extra winter malt .
This increase in malt results in a higher alcohol content, so the yeast that feeds on the sugars in the malt is given a feast of greater proportions.
By adding sugar, also known as “Belgian candy,” we can increase the activity of the yeast, and the beer gets a second fermentation in the bottle, carbonating the beer in a natural way.
This gives the beer a beautiful and large froth.
This fine Dubbel has a rich malt aroma of malt, yeast, dark fruit, & spice; flavors of sweet malt, yeast, caramel, dark fruit, raisons, and spice, with a faint touch of pleasant bitterness, and it fills up the gap between our 6° Pater and the 9° Prior

Bottle shared with Paul and James on the Eurostar back from Brussels. Pours dark, red-brown with a medium, off-white head. Some earthy sugar in the snout, with toasty caramel. Big sweet flavor, some dark sugar, slightly syrupy and boozy, with sugary leaves. Medium bodied with fine to average carbonation. Warm, sugary finish, with sweet dough, some alcohol, toffee, a bit of dirty bitterness that lingers amidst the sugar malts. I love Dubbels but not a huge fan of this one.

33 cl. bottle @ home. Pours brown with an off-white head. Smell is moderately yeasty. a lot of caramel and yeast in the taste with medium carbonation. nice dubbel

Bottle. Amber colour with a beige head. Aroma is sugar, caramel, malt. Flavour is sweet, malt, sugar, caramel, yeast, fruit, dried fruits. OK/Nice beer.

Clear dark brown with an off-white head. Aroma is sweet, malty, caramel, fruity, yeasty and spicy. Flavor is medium sweet and moderate bitter. Dry and moderate bitter finish. 080910

Bottle at De Waag, Delft. Pours Hazy brown with medium beige head. Aroma is Roasted malt, brown sugar and fruits. Flavor is sweet malt, fruits, spice and chocolate. Nice beer

Note: the beer is already a few months past expiration date.This will of course have influenced the flavour and aroma's for the better.

Dark ruby red to brown beer, little cloudy, fine sediment floating around. Light beige creamy head, stable and adhesive. Aroma: caramel, dried fruits, alcohol, raisins, mocha. MF: ok carbon, medium to full body. Taste: fruity, sweet caramel but not cloying, berries, a little sour, some hops balancing it all. Aftertaste: fruity sour, caramel, milk chocolate, a little bit cloying but nothing disturbing. Lovely beer to age.

Bottle. Frothy white good mostly lasting head. Amber colour. Moderate malty and hoppy aroma with powerfull nice yeasty/fruity esters notes. Light sweet and moderate bitter flavor. Nice fruity notes. Long nice finish. Creamy palate. Nice dubbel but not so dark.
