HELIUM is a Wheat Peach Sour of 5% ABV, brewed in collaboration with Brasserie de Blaugies of Belgium and Tempel Brygghus from Uppsala in Sweden.
It is part of a special six-pack of beers—the Noble Gas Project—created with twelve other breweries to celebrate the third birthday of Siphon Brewing.
Working with Siphon Brewing on the recipe and process beforehand and attending on brewday were Pierre-Alex Carlier from Brasserie de Blaugies and Arvid Landgren from Sweden’s Tempel.
HELIUM is a sour (pH 3.2), dry (fully attentuated) and fruity (lemon & peach) beer which has been kettle soured by various strains of lactobacillus, including the natural cultures existing in the malted barley grains which are added to the kettle during the acidification process. The addition of peach purée delivers a further fermentation and a soft fruit profile and the selection of a characterful Belgian ale yeast gives both citrus esters and a peppery spice.

Jamais je n'aurai imaginé Blaugies faire une collab pour une 'sour peach' - comme quoi, tout est possible.
Couleur dorée, blonde présentant un léger voile, le col est fin blanc retombant vite.
Arôme est fin fruité sur la pêche avec une note citrique qui perce en rétro-nasal et est accompagnée par des effluves de grains - malts dont pas mal de pils. Rétro un peu houblonné et repris de suite par les effluves de pêche.
Palais est léger marqué de suite par ce côté pils et froment - qui doivent être le côté hennuyer de Blaugies.
Le caractère pêche reste plutôt discret tout comme l'acidité. Cependant, le fruité est rehaussé par un caractère assez, voire trop, haut en effervescence qui le fait revenir en avant en toute fin de bouche.
Fini est sec marqué avec une acidité fruitée-citrique.

Flaska från Etre Gourmete. Fin frisk lite fruktsöt laktosyrlig kettle sour. Aprikospure, citrus, syrligt vitt vin. Känns mer Tempel än Blaugies. Ok

Donkergeel bier met weinig schuim. Smaak is fris fruitig licht zuur met iets van perzik en citrus. Fijne zachte smaak die ik wel kan waarderen.

Bottle. Color: Rather pale golden, white head, a lot of tiny carbonation bubbles. Aroma: Moderate tart, fruity notes of stone fruit. Taste: Moderate tart, light sweet and bitter, lactic, peach notes. Some lemon and lemon peel also. Below medium body, average carbonation. Thin but ok.

Bottle at home. Hazy orange golden with barely any head. Sour peach indeed, and yes there’s some wheat too. It does what it says on the label. Kettle sour notes, apricot, dusty thyme, dry green leafy notes. Medium sour, light sweet and bitter. Medium bodied with fizzy carbonation. Quite OK.

One of this new Siphon series (collabs with other breweries) named after the noble gasses. At BXL Beerfest. Thick, creamy and dense, eggshell-white head on a hazy, pure yellow-golden blonde beer. Aroma of peaches but much more in a sour, unripe way than in the ripe sweet way I was expecting, kefir, sour yoghurt, redcurrant, freshly cut cucumber, crushed green gooseberries, minerals. Crisp and sour, fruity onset, again lacking the sweetness of ripe peaches but instead much more reminiscent of sour green gooseberries, spritzy carbonation, lactic kefir-like tartness throughout but light and elegant, light white-bready malt base, lingering crisp ‘green’ and sour fruitiness, touch cucumber, remaining very low in bitterness but the overall, non-puckering, elegant sourness. Very refreshing, but it remains a bit unclear to me what kind of peaches were used here and how…
