HELIUM is a Wheat Peach Sour of 5% ABV, brewed in collaboration with Brasserie de Blaugies of Belgium and Tempel Brygghus from Uppsala in Sweden.

It is part of a special six-pack of beers—the Noble Gas Project—created with twelve other breweries to celebrate the third birthday of Siphon Brewing.

Working with Siphon Brewing on the recipe and process beforehand and attending on brewday were Pierre-Alex Carlier from Brasserie de Blaugies and Arvid Landgren from Sweden’s Tempel.

HELIUM is a sour (pH 3.2), dry (fully attentuated) and fruity (lemon & peach) beer which has been kettle soured by various strains of lactobacillus, including the natural cultures existing in the malted barley grains which are added to the kettle during the acidification process. The addition of peach purée delivers a further fermentation and a soft fruit profile and the selection of a characterful Belgian ale yeast gives both citrus esters and a peppery spice.

Bottle. Orange yellow color. Peach and citrus in the aroma. Just a hint of herbs. Sour flavor with peach and soft floral notes. Nice.

On tap at Fuggles Beer Cafe Tonbridge. Cloudy gold orange colour lasting white head. Passionfruit coulis aroma some lemon kettle sour flavour. Light yoghurt. Aroma is attractive though

29 June 2019. At Siphon 3d Birthday Party, Damme. Cheers to Anke, Erwin & Ama Deke! Cloudy pale yellow with a very thin, frothy, off-white head. Aroma of young peach, yellow nectarine, wheat, grass, mandarin, yoghurt, lime, sorbet. Taste is medium fruity sweet & sour, lots of unripe peach & nectarine wrapped in a yoghurty & wheaty character, a bit lemony underneath, slightly 'stonefruit'-like bitter. Dryish, tart, earthy hoppy finish, lingering peach, yoghurt & sorbet. Medium body, slick texture, soft carbonation. Nice lactic & fruity character, still balanced all in all.

Pretty cloudy pale blond to light orange beer, small creamy irregular white head, little stable, non adhesive. Aroma: bit smelly, fruity, sulphur notes, sweet impression, bit of marzipan. MF: lively carbon, medium to light body. Taste: pretty sour start, lots of lemon juice, little fruity, more acidic. Aftertaste: dry, acidic, some banana, bit metallic, more acidic, lots of lemon, bitter, grapefruit, dry finish, decent.

Small, fast going white head over hazy orangey yellow beer; end of bottle solid yeast. Peach obvious in the nose. Bit of diary, lactic, lactic acid, not much fruit here. Fruity flavours, yellow fruit, lactic acid in a very mild, pleasing way. Bit peppery, Szechuan pepper, grains of Paradise, but also lemon-flavoured tea, and with the finish having a bitterness not unlike tannines, this tea impression is enhanced. Feels well-carbonated, titillating; light body if a bit wheatslick, refreshing. Better than the sum of its parts, thirst-quenching, pleasing!
