Poere Di Cwin is the word used to designate quince in Wallonian dialect. A blend of saison (spring barley, Wallonian Winter barley, spelt), 1 year old lambic and Wallonian quince, fermented for 1 year in ex-Meursault barrel.
Aside from the rustic notes from the saison yeast and the lambic microflora, the nose is comforting with warm notes of wood, vanilla, cloves as well as a fresh component reminiscent of tea, jasmine, apple, quince and a mineral touch. Taste reflects the nose together with notes of lemon, tangerine curds, pillowy grain backbone and a mellow body.
This beer is the culmination of our efforts to bring an elegant beverage from ingredients (quince, winter barley, wild yeast & bacteria) that once were considered too rustic by the public.

Pours clear, pale gold. Scent is full, rubbery,, bunt plastic, pretty bad. Taste is sharp, hollow, plastic, harsh, burnt rubber, chlorophenolic. Awefull.

Cloudy blond yellow beer, small creamy white head, unstable, non adhesive. Aroma: ok carbon, medium body. Taste: a bit sweet up front, fruity notes, funky, a little bitter, spicy touch, weird. Can’t describe it. Aftertaste: dirty herbal notes, spicy and overall just weird. Is it the yeast that is pulling something here? Not quite sure, but I don’t like it too much.

Dorée, pâle, col fin blanc.
Arôme au bouquet de coing qui se fait bien présent, bouquet fin des grains/céréales - épeautre pour le rustique plus marqué. Petite note funk du lambic perce en rétro-nasal.

Palais est frais garde la lignée fine et rustique des autres verisons avec encor eun ajout de lambic qui offre une fine note de funk mais sans jamais prendre le dessus sur les grains.
Le côté coing apporte une fine sucrosité oscillant vers la poire et un côté frais fruité qui est bien plaisant. Petite pointe épicée en fin de bouche.

Bottle. Hazy pale golden color with white head. Aroma is quince, good funk, a bit straw, dusty. Taste is quince, nice white wine barrel, a bit dusty, fine-bubbled carbonation. I love quince, and this is good!

MBCC. Almost clear yellow with a white head. Aroma is dry, malty, wood, fruity and light barnyard. Flavor is quite sweet and light acidic. Dry and light acidic finish. 140522
