Bouteille 75cl @ BXLBeerFest’24. Approche intéressante avec la version Roche essayée en parallèle et où le domaine travaille en parcellaire et de voir la différence de mêmes variétés mais sur un sol différent.
Dorée sur léger voile, pas de col.
Arôme plus sur le volet cidre et pommes pressées et fermentées, légère minéralité et acidité plutôt marquée.
Palais sur une effervescence assez haute voire un peu agressive, râpeux en fin de bouche – plus sec et funk dans l’approche avec une acidité et côté âcre marqués des pommes.

Bottle from delicatessen in Cambremer. Deep golden with very fizzy head. Soft funk. Crisp dry apple, quite woody, leathery, mineral. Soft green fruit notes. Quite tannic and mineral with dry fruity notes, including dried stone fruit and marmelade. Light sweet and bitter, over medium dry. Lovely, one of the best.

Bottle. Cloudy golden amber. Dry apple juice and leather. Taste is wonderfully slow, sparkly, balanced. Starts with tart very fruity but not sweet apple, moves on slowly to a fluffy smooth cloud of late summer garden apples, and ends on a calm and earthy apple tone. Knows exactly what it wants to be, and executes it perfectly and without a hurry. Lovely.

30 year birthday Bottle. Golden, offwhite foam. Lovely flowery apple aroma. Cloudy golden, golden foam. Medium body, dry chewy, bitter apple skin, foamy mouthfeel, bright food apple flavor, well balanced.

2016 bottle. Slightly hazy amber color with foamy white head. Aroma is leather, tobacco, fresh red apple juice. Taste is leather, red apple flesh, earthy, super complex. Almost bone dry finish. Foamy mouthfeel with champenoise carbonation. Amazing, really up there with the best of the best!
