Tom is the second oldest brother and works a few streets away from the brewery at Zomerdijk Engineering. As you may know by now, we’re not only brewers but also build machines that breweries need. πŸ”§ Tom is chief of Zomerdijk Engineering.

It's not often, but sometimes Tom carries a whisky bottle around, taking little sips during our vrijmibo's. We caught him once sipping on a fancy american rye whisky.

That conversation led us to beer - it does, always, end up in beer - and rye wine. We've never brewed this style before, so this homage to Tom was the best excuse we could find.

Keg at Casc, Aberdeen. It pours darkest ruby brown with a decent tan head. The aroma is warming booze, spicy, rye bread, vanilla, loads of dried fruits, fruit cake, cava nibs, toffee, caramel, cola and some definite rye whiskey likes vibes. The taste is slick, oily, unctuous, bitter - sweet, plenty of warming spice, peppery, touch of ginger, warming booze, dried fruits, russian, sultana and the like, vanilla, fruit cake, toothy, chewy, dry oak spice, earthy, leather, cacao nibs, splash of cola, hint of coffee and some more booze through the finish. Fulsome body, fine carbonation and slick mouth feel. Fun stuff. Perhaps almost a touch sweet, but it does really have a good almost rye whiskey character to it. Fun.

On tap at the leftover day of the bpbw 22. A nice rye wine, loads of malt and rye character, strong caramel, medium bitterness. Very nice.

Tap@Moersleutel 6 year TTO Taphouse, Copenhagen (27/08/2022) - very dark reddish brown with a beige head. Toasted and sweet malty with layers of caramel and toffee sweetness, dried fruit shred, spices, medium plus body, warming lingering spiced malty close. Very nice.

Straight from can during a saturday afternoon hike. Color: Dark reddish brown, I presume? Didn't check... Beige to light brown head for sure. Aroma: Caramel toffee, dark dried fruit. Taste: Dark malt, sweet, caramel toffee, chocolate and caramel fudge. Darker burnt sugar Hints of licorice. Subtle spicy rye notes. Some sweet dark dried fruit, raisin, plum, fig. Over medium sweet, sticky and boozy. Light to moderate bitterness. Full body, below average carbonation. Starting a bit monotonous, but getting some more balance and complexity. Still very sweet. Otherwise quite nice.

Can, 10%. very dark brown with small beige head. Aroma is malt, caramel, toasted and dark fruit. Flavour is mat, caramel, toasted, sweet, cark fruit, burned caramel, yeast, warming and medium bitter.

Really well made big beer. Clean round bold dark fruit barleywine. American ale yeast esters. Great beer. Bierkonig ams

Can at home. Pours deep ruby, nose is caramel, toffee, berries, peppery rye, taste is sweet toffee, berries, juicy fruit, dry, spicy finish.
