Coffee Porter prodotta in collaborazione con la Torrefazione Artigianale Fazenda CAFFE di Fiuggi, a pochi passi da Porciano.
Malto base Maris Otter, malto Brown, Crystal T50,
Pale Chocolate e meravigliose Golden Naked Oats, avena “nuda” tostata, ottimi malti inglesi
Simpsons Malt Limited e Thomas Fawcett & sons limited. Luppolo Challenger e Lievito Inglese.
La birra in fase di maturazione a freddo ha ricevuto un “dry beaning”, ovvero un dry hopping di chicchi di caffè, rimossi dopo 48h di contatto.
Due le varietà: Etiope e Santos Cioccolatato
Brasile. Questi favolosi chicchi sono stati tostati artigianalmente per noi da Fazenda CAFFE ed usati lo stesso giorno a poche ore dalla tostatura!
Come abbiamo gia potuto notare negli esperimenti homebrewing e con lo studio di alcuni articoli e conversazioni direttamente con Scott Janish e Michael Tonsemeire del birrificio americano
Sapwood Cellars, abbiamo optato per utilizzare il caffè “the fresher the better”: in genere, il caffè raggiunge il picco circa 4-5 giorni dopo la tostatura e può iniziare a scendere di caratteredopo soli dieci giorni. Bere caffè troppo presto (il primo paio di giorni dopo che è stato tostato) non è l’ideale perché non lascia al caffè abbastanza tempo per degassare (permettendo all’anidride carbonica di fuoriuscire dai chicchi) e può dare origine a sapori poco brillanti. Il degasaggio dei chicchi è il motivo per cui i sacchetti di caffè sono dotati di una valvola traspirante unidirezionale, che consente all’anidride carbonica dei chicchi di fuoriuscire dal sacchetto senza che l’ossigeno entri. Per questo motivo abbiamo utilizzato il caffè tostato lo stesso giorno che si degaserà direttamente nella birra, preservando potenzialmente i sapori del caffè fresco.

Dark brown with a tan head. Toasted malts, dry coffee, sweet cream, light chocolate. It’s full of roasted coffee notes but it somehow stays light unlike many coffee beers. Medium bodied. No heavy finish but it stays lighter making it one of the most drinkable coffee beers I’ve had. Really nice.

Handpump at Ma Che Siete Venuti a Fa. Darkest brown, lovely tan cream. Lovely sweet and fruity coffe aroma, medium to full creamy, cappucino mouthfeel, kahlua coffee drink on the palate. Impressively intense for its strength, yet very drinkable an moreish. World class.

Pours almost black, shows some reddish hints if seen through light. About one finger of greyish, relatively large bubbled head. Recedes quite quickly, leaves little lacing. Aroma: strong roasted malts with notes of fresh-made espresso coffe and the slightest hint of fruitiness, dark chocolate, a lighter soft feel (kinda milk-stout like) underneath that doesn't take away from the strong roasted character. Overall a clean and pretty intense aroma. Taste notes follow the aroma closely, again with very good intensity and precision. Could have maybe used a bit more depth. Medium sweetness, medium to high bitterness with a bit of roasted malts acidity. Overall quite on the bitter side in both taste and aftertaste with a dry, slightly astringent finish. Medium bodied (feels rather dense for the abv) with quite light carbonation; half-thick, half-silky mouthfeel. Very nice.

Canned, 440 ml at Luppolo Station, Rome. Dark brown with beige head. Roasted, lots of nice coffee aroma, dark chocolate, easy drinkable and delicious. Moderate sweetness with nice bitter finish. Medium bodied.

Hand pumped at Ranzani 13, Bologna, Italy. Pours dark brown,, with very fine light brown foam. Aroma is weak, with some chocolate and coffee. Body is average, with no carbonation. Taste is medium roasty, some related bitterness. Final is fairly short.

Tap @Luppolo Station in Rome-Italy. Coffee bean color with a regular tick creamy-ivory foam. Foam: blast of filtered coffee, milk chocolate, cappuccino. The mouth is smooth, soft, praline, coffee.
