At Goose Island, we believe ideas and inspiration can come from anyone in the Goose family, and our Biscotti Stout is a perfect example that came from our very own HR team. Inspired by the Italian desserts of her childhood, Jill Cerone, People Manager at Goose Island, dreamed up this variant after grabbing a box of chocolate-dipped biscotti from her cabinet. Working with the brewing team, Jill brought the flavor to life with notes of anise, marzipan, cocoa, and buttered toffee. The biscotti enhances flavors already found in our Bourbon County Stout and adds strong notes of nostalgia from your Italian grandma’s kitchen. One sip and you’ll be reminded of pizzelle cookies, Easter Pane di Pasqua and, of course, almond biscotti.

Bottle at SHIG place tasting, big thanks to the SHIG, 16/04/23. Light black with a tan cap that thins to a swirl. Nose is dark malts, toffee, aniseed, spice, chocolate, Eccles cake, mellow roast. Taste comprises chocolate, caramel, liqourice, spice, dark malts, booze, brown sugar melt, bourbon bite. Full bodied, fine carbonation, semi drying close with a balanced rising boost. Solid.

Bottle shared at shigs place in Newport news Virginia. Many thanks to shig for this one. A oily dark black brown coloured pour with a small mid tan head. Aroma is rich armetto, cinnamon, marzipan. Aniseed. Flavour is composed of semi sweet brown sugars, aniseed, biscotti, caramel brown sugars, spicy cinnamon. Palate is medium sweet, oily, Warming alcohol. Fine carbonation.

Bottle thanks to MrsSHIG: Poured an oil viscous brown black with a tan head. Aroma is almond, chocolate, boozy, marzipan, rich malts, licorice. Taste vanilla, almond, chocolate, marzipan, roasted malts.

500 ml bottle. Aroma is a mega ton of black licorice. Flavor is some chocolate and licorice, almond is steady throughout the sip. Bourbon is low in character. I bet in a year this will be awesome.

Bottle best before Aug 19, 2024, drunk 1/2/23. Clear dark amber-to-mahogany. No head. Holy anise! Caramel-cocoa with soft, moderately spicy bourbon. Big anise up front turning to sweet caramel and rich chocolate-almond liqueur. Drying, not very boozey, not sweet. Good stickiness, lots of acidity on the finish. Hmmm, could use a year to let some of this anise fade; it's way too much currently.

Bottle split 4 ways aroma is loads of anise and then some. Does taste like a biscotti. Maybe let this sit a year and see if it balances out.

Capped 500 from Corti Bros. Pours dark brn/blk with a transient tan head. Aroma of chocolate with a caramel note. Very full in body. Flavor is chocolate, toasted/burnt malt, bourbon and anise. Not dry. Bitter from burnt malt and heat. Smoothly chocolate in a long finish. Anise ever present. Nice.

Bottle from the Packie in Manchester. Thick inky black with a small fuzzy tan head that quickly recedes. Licorice roast chocolate and spice with a nutty background note. Still has that bourbon and warming alcohol in the back. Complex, really tasty.
