Secular is a Byzantine incantation uttered from the immemorial depths of the earth: Spoiled with Honey, Purified with Chamomile, Sanctified by Cedar. A Sour Gruit, dry & slighlty bitter with complex floral and woody notes.

Can from Geers.
A: hazy golden, small, foamy, white head.
A: unripe peach, lemon zest, lemongrass, flowers, artisan honey.
T: sour unripe peach, gooseberry & apple; bit herbal, flowery.
F: tart finish, funky yellow fruit, honey, some woody tannins.
P: medium body, slick texture, average carbonation.
Unusual combination but likeable.

[19/2/23] Draught at Nüetnigenough in Brussels. Slightly hazy golden. Spiciness, honey, cedar wood, sourish-sweetish.

33cl can, BB 27/12/2023, batch# P605.
Pâle claire, col épais blanc-cassé, pétillant et peu tenace.
Arôme sur un nez rappelant un peu le cidre avec un léger boisé en rétro-nasal (clairement du cèdre), le tout restant assez frais au nez - peut-être de l'ajout de miel?
Palais reste en ligne avec les autres gruit proposés par La Source et ces versions sont toujours une addition bienvenue dans une mer de 'hazy'.
Le caractère propose une bonne teneur organique de miel avec une petite note épicée. Fin de bouche assez sèche avec un boisé tenace.

Paired with grilled Jerusalem artichokes, radishes, shiitake mayo, sour cream and garlic yoghurt dip, olive oil, spring onions and pea shoots.

Clear gold blond beer, big aery crackling white head, unstable, falls down immediately, non adhesive. Aroma: very malty, grains, a bit fruity, sour apples and pears, nice stuff! MF: ok carbon, medium body. Taste: lots of sour apples, pretty acidic, apple juice, gentle bitterness, a bit herbal, some apple skin. Aftertaste: floral touch, pretty sourish, bitter, spicy, lemony, herbal, honey, a bit soapy, some apple skin.
